These boneless buffalo chicken bites are perfection. Lightly battered and pan-seared, they're crispy on the outside with a moist and tender interior, then tossed in my mom's signature buffalo sauce.

2 lb boneless skinless chicken breast (patted dry and diced into 2" pieces)
1/2 c cornstarch (or arrowroot powder for paleo)
2 tsp sea or kosher salt
1 tsp cracked black pepper
1 tsp onion powder
1 tsp garlic powder
1/2 tsp paprika
2 tbsp olive oil (or avocado oil for paleo)
1/2 c Frank's RedHot
1/2 c Texas Pete Original Hot Sauce (or your favorite hot sauce - see suggestions in post)
2 tbsp butter

Steps:

  • Combine the cornstarch, salt, onion powder, garlic powder, pepper, and paprika in a large mixing bowl. Whisk until thoroughly combined.
  • Add the chicken to the cornstarch mixture; toss until evenly coated.
  • Heat a 12" non-stick skillet over medium high heat. Add 1 tbsp olive oil and heat until it shimmers. Add half the battered chicken to the skillet in a single layer. Sautee 5 minutes until the breading is lightly golden brown, flip the pieces, and sautee 5 minutes on the other side. Remove the chicken using a slotted spoon and transfer to a plate. Repeat with the remaining chicken pieces, adding additional olive oil as needed.
  • Add the butter to the skillet and melt, scraping up browned bits as it cooks. Add the buffalo sauces to the melted butter and whisk until combined.
  • Add the cooked chicken to the buffalo sauce. Toss to coat all pieces in sauce, then cook an addition 3-5 minutes until the chicken is cooked through and the sauce slightly thickens. Serve immediately with blue cheese or ranch dipping sauce and sliced carrots and celery.

2 tablespoons cayenne pepper
1 teaspoon salt
1 teaspoon ground black pepper
2 eggs
1 cup vegetable oil
1 pound skinless, boneless chicken breast halves, cut into 1-inch pieces
¼ cup hot sauce
1 tablespoon chopped garlic
1 teaspoon butter

Steps:

  • Whisk flour, cayenne pepper, salt, and pepper together in a bowl. Beat eggs together in a separate bowl. Dip chicken pieces in the egg; transfer chicken to flour mixture and coat completely.
  • Heat oil in a saucepan over medium heat.
  • Fry coated chicken pieces in the hot oil, working in batches, until no longer pink in the center, about 3 minutes per side; drain on a paper towel-lined plate.

Spicier or tangy er, you decide. This recipe is not for those on a diet, in fact the more bad for you ingredients you use, the better. This is one of those recipes for those day's you feel like indulging.. when you wake up in the morning and get a frapuccino instead of a black coffee!

3 lbs boneless skinless chicken breasts
4 eggs
1 cup buttermilk (you'll need the rest of the container for the dipping sauce)
4 cups flour
1/2 cup butter
1/2 cup distilled white vinegar
1 1/2 hot sauce (crystal brand or franks)
oil (for frying, your choice)
1 (8 ounce) package buttermilk ranch salad dressing mix (follow directions)

Steps:

  • First make the dressing and put it in the fridge.
  • Heat up oil in a deep pan, cut the chicken in to small-ish bite size pieces, in a seperate bowl beat eggs and buttermilk, then in another bowl put flour. Dip chicken into egg mixture then into flour then fry. continue this til chicken is cooked, set it aside.
  • In a deep frying pan mix hot sauce, vinegar then 1/2 cube of butter, note that the butter controls the 'hot' factor for less spicey add more butter. After butter melts add chicken a little at a time remove it immediately from the sauce so it does not get soggy, repeat this until all of the chicken is covered.
  • Serve with buttermilk ranch, celery and carrots. I like to serve it with the remainder of the sauce in another bowl for extra tang.
  • Enjoy! This also makes a great left over dish.

6 boneless, skinless chicken breasts (cut into bite sized pieces)
⅓ cup apple cider vinegar
1 teaspoon paprika
1 teaspoon garlic powder
1 cup buffalo sauce
½ cup Honey
1 Tablespoon olive oil

Steps:

  • Cut the chicken breasts into thick bite size pieces.
  • In a bowl, or gallon zip lock bag, add the chicken breasts pieces, apple cider vinegar, 1/2 teaspoon paprika, 1/2 teaspoon garlic powder, 1/2 cup buffalo sauce, and 1/4 cup honey.
  • Mix until well combined and all the chicken is covered.
  • Place the marinating chicken in the fridge for about 2-4 hours.
  • Remove the chicken from the fridge and preheat oven to 350 degrees.
  • Place a cooling rack on top of a cookie sheet for best results, or just spray a cookie sheet with non-stick cooking spray.
  • In a smaller bowl, combine the olive oil, 1/4 cup honey, 1/2 cup buffalo sauce, 1/2 teaspoon garlic powder, and 1/2 teaspoon paprika.
  • Dip each chicken piece into the mixture and place on the cooling rack. Do this until each chicken piece is covered on on the rack.
  • Place the chicken in the oven and bake for 20 minutes, flipping once halfway through.
  • Remove from oven once done cooking and enjoy!
  • We like to dip them in ranch or a little more buffalo sauce
