After making muffins this way I will never use a different recipe. You can use whatever fruit you want. I've made them with mangoes and blueberries, peaches & blackberries as well as the peaches and nectarines.

1 1/2 cups flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 ripe peach (peeled, pitted, and diced)
1 ripe nectarine, pitted and diced (or use 1 1/2 cup other fruit)
1/8-1/4 cup brown sugar

Steps:

  • Preheat oven to 400 degrees.
  • Grease 8 muffin cups or use paper liners.
  • In a large bowl combine flour, white sugar, salt, and baking powder.
  • Add oil, egg, and milk.
  • Stir only until blended together.

2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon

2 eggs
1 1/3 cups buttermilk
3/4 cup packed light brown sugar
1/3 cup melted butter
1 1/2 teaspoons vanilla extract
1 cup diced fresh nectarine

Steps:

  • Preheat oven to 375 degrees. Grease a 12-cup muffin tin with butter or nonstick cooking spray or line with paper cups. In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, and salt until well combined. In a separate bowl, whisk together the eggs, buttermilk, brown sugar, melted butter, and vanilla extract. Pour the egg mixture into the flour mixture and stir with a large spoon until just combined. (Make sure to scrape all the flour up off the bottom of the bowl.) Gently fold in the diced nectarines. Divide batter between the 12 muffin cups. (A mechanical ice cream scoop works great for this.) ¾ cup white sugar
½ teaspoon salt
2 teaspoons baking powder
⅓ cup vegetable oil
1 egg
⅓ cup milk
1 large ripe peach - peeled, pitted and diced
1 very ripe nectarine, pitted and diced
1 tablespoon brown sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 8 muffin cups or line with paper muffin liners.
  • In a large bowl, combine flour, sugar, salt and baking powder. Add vegetable oil, egg and milk; mix well. Fold in diced peach and nectarine. Fill each muffin tin to the top with muffin mix. Sprinkle a little brown sugar onto the top of each uncooked muffin.
