BEST WHITE CHICKEN CHILI

Change things up this winter by making chili with chicken instead of beef. For a milder version, you can substitute a green bell pepper for the jalapenos. Garnish with cheese and cilantro if desired.

BEST SLOW COOKER WHITE CHICKEN CHILI

Best Slow Cooker White Chicken Chili image

Hatch chiles and tomatillos take this white chili to another level. I like to make my own roasted salsa verde but you can always use jarred or canned. Cooked in the slow cooker for ease and convenience. Top with your choice of sliced avocados, shredded cheese, cilantro, or sour cream.

1 pound tomatillos, husked
½ onion, cut into 2 pieces
1 serrano pepper
2 cloves garlic, unpeeled
½ cup chopped fresh cilantro
1 teaspoon salt
4 cups chicken broth
2 (15 ounce) cans great Northern beans, drained

½ teaspoon salt, or to taste
4 Hatch chile peppers, halved and seeded
½ cup shredded jalapeno Jack cheese

Steps:

  • Place tomatillos, onion, serrano pepper, and garlic in a hot cast iron skillet and cook until blackened, turning frequently, 7 to 10 minutes. Peel garlic cloves and transfer to a blender. Add the blackened vegetables, cilantro, and salt; blend until smooth.

THE BEST WHITE CHICKEN CHILI

The Best White Chicken Chili image

This is the first recipe I ever tried for white chili, and it is the best one I have ever found. I found it in a cookbook called So Fat, Low Fat, No Fat, but don't let that fool you. The chili may be low on fat but it has a fantastic flavor and always gets raves every time I make it. This is not the exact recipe in the book, as I have made a few minor adjustments to make it a little easier.

Time 1h35m

Yield 8 serving(s)

Number Of Ingredients 13

2 1/2 cups water
1 teaspoon lemon pepper seasoning
1 teaspoon ground cumin
1 tablespoon olive oil
4 boneless skinless chicken breast halves, trimmed of all excess fat
1 clove garlic, finely chopped
1 cup chopped onion
2 (8 ounce) cans white shoepeg corn, drained
2 (4 ounce) cans chopped green chilies, undrained
1 teaspoon ground cumin
2 -3 tablespoons lime juice
2 (14 ounce) cans great northern beans, undrained
shredded monterey jack cheese, to garnish

Steps:

  • In a 5-qt stockpot, combine water with the lemon pepper, 1 tsp ground cumin, and olive oil.
  • Bring to a boil.
  • Add the chicken breast halves and return to a low boil, then reduce the heat to low and simmer 20-30 minutes or until the chicken is fork tender and the juices are clear.
  • Remove the chicken from the broth and cut into bite-size pieces, then return it to the broth.
  • Add the garlic, onion, corn, green chiles, 1 tsp ground cumin, lime juice, and Great Northern beans to the broth.
  • Bring to a boil.
  • Simmer until thoroughly heated, about 45 minutes.
  • To serve, ladle into soup bowls and sprinkle cheese on top.
  • Refrigerate any leftovers; this chili is usually even better heated up the next day.

Tips:

  • Use a combination of chicken breasts and thighs for a more flavorful chili.
  • Sautéing the onions, garlic, and poblano peppers before adding them to the chili will help to enhance their flavor.
  • Use a variety of beans in your chili, such as cannellini beans, kidney beans, and black beans.
  • Add some corn and diced tomatoes to your chili for a pop of color and flavor.
  • Season your chili to taste with salt, pepper, cumin, chili powder, and oregano.
  • Let your chili simmer for at least 30 minutes, or up to 2 hours, to allow the flavors to meld.
  • Serve your chili with your favorite toppings, such as sour cream, shredded cheese, and chopped cilantro.

White chicken chili is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great way to use up leftover chicken, and it can be easily customized to your own tastes.
