Time 17m

Yield 4 servings

Number Of Ingredients 6

1 cup all-purpose flour for dredging, seasoned with salt and pepper
1 1/2 to 2 pounds Chilean Sea Bass fillets
4 tablespoons butter/olive oil combination
1 cup dry white wine
1 tablespoon butter, softened
2 tablespoons drained capers

Steps:

  • Preheat oven to 200 degrees F.
  • Place flour for dredging in a shallow bowl. Coat each fillet with seasoned flour and shake off excess. Heat a large nonstick skillet over medium heat for 3 to 4 minutes. Add butter/olive oil combination. Add the fillets, without crowding. Increase heat to high and saute, shaking the pan from time to time, until the bottom of the fish is nicely browned, about 3 minutes. Turn and brown the other side. Remove fish to a plate and keep warm in the oven. Repeat with remaining fillets.
  • Deglaze the pan with white wine. Cook, stirring over high heat until reduced by about one-third. Stir in remaining butter and drained capers.
  • Plate fish and drizzle sauce around each fillet.

Tips for Cooking Sea Bass

  • Choose the right fish. Look for a sea bass that is fresh and has bright, clear eyes. The fish should also be firm to the touch and have a mild, briny smell.
  • Prepare the fish. Rinse the sea bass under cold water and pat it dry with paper towels. If you are cooking the fish whole, you can leave the scales on. However, if you are filleting the fish, you will need to remove the scales before cooking.
  • Season the fish. Sea bass is a mild-flavored fish, so it is important to season it well. You can use a variety of seasonings, such as salt, pepper, garlic powder, onion powder, paprika, or lemon pepper.
  • Choose the right cooking method. Sea bass can be cooked in a variety of ways, including baking, broiling, grilling, pan-frying, and steaming. The best cooking method will depend on your personal preferences and the equipment you have available.
  • Cook the fish until it is cooked through. The internal temperature of the fish should be 145 degrees Fahrenheit when it is cooked through. You can check the internal temperature of the fish by inserting a meat thermometer into the thickest part of the fish.

Conclusion

Sea bass is a delicious and healthy fish that is easy to cook. By following these tips, you can cook a perfect sea bass that your family and friends will love.
