Categories     main-dish

Time 3h20m

Yield 8 servings

Number Of Ingredients 10

1/4 pound (1 stick) unsalted butter
1 lemon, zested and juiced
1 teaspoon chopped fresh thyme leaves
1 fresh turkey (10 to 12 pounds)
Kosher salt
Freshly ground black pepper
1 large bunch fresh thyme
1 whole lemon, halved
1 Spanish onion, quartered
1 head garlic, halved crosswise

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter in a small saucepan. Add the zest and juice of the lemon and 1 teaspoon of thyme leaves to the butter mixture. Set aside.
  • Take the giblets out of the turkey and wash the turkey inside and out. Remove any excess fat and leftover pinfeathers and pat the outside dry. Place the turkey in a large roasting pan. Liberally salt and pepper the inside of the turkey cavity. Stuff the cavity with the bunch of thyme, halved lemon, quartered onion, and the garlic. Brush the outside of the turkey with the butter mixture and sprinkle with salt and pepper. Tie the legs together with string and tuck the wing tips under the body of the turkey.
  • Roast the turkey about 2 1/2 hours, or until the juices run clear when you cut between the leg and the thigh. Remove the turkey to a cutting board and cover with aluminum foil; let rest for 20 minutes.
  • Slice the turkey and serve.

Time 4h10m

Yield 16

Number Of Ingredients 6

1 (12 pound) whole turkey, neck and giblets removed
½ cup butter, cubed
2 apples, cored and halved
1 tablespoon garlic powder
salt and pepper to taste
⅔ (750 milliliter) bottle Champagne

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rinse turkey, and pat dry. Gently loosen turkey breast skin, and insert pieces of butter between the skin and breast. Place apples inside the turkey's cavity. Sprinkle with garlic powder, salt, and pepper. Place turkey in a roasting bag, and pour Champagne over the inside and outside of the bird. Close bag, and place turkey in a roasting pan.
  • Bake turkey 3 to 3 1/2 hours in the preheated oven, or until the internal temperature is 180 degrees F (85 degrees C) when measured in the meatiest part of the thigh. Remove turkey from bag, and let stand for at least 20 minutes before carving.

Tips:

  • Thaw your turkey properly: Place the frozen turkey in the refrigerator for 24 hours per 4-5 pounds of turkey. For faster thawing, submerge the sealed turkey in cold water, changing the water every 30 minutes. Cook the turkey immediately after thawing.
  • Choose the right size turkey: A good rule of thumb is 1 pound of turkey per person. This will ensure that you have enough food for your guests without any leftovers.
  • Brine the turkey: Brining the turkey in a salt and water solution helps to keep it moist and flavorful. You can brine the turkey for up to 24 hours, but 12 hours is usually sufficient.
  • Roast the turkey at a high temperature: This will help to create a crispy skin and juicy meat. Roast the turkey at 450°F for the first 30 minutes, then reduce the temperature to 350°F and continue to roast until the internal temperature reaches 165°F.
  • Let the turkey rest before carving: This will help the juices to redistribute throughout the meat, resulting in a more tender and flavorful turkey.
  • Make a delicious gravy: Use the drippings from the turkey to make a rich and flavorful gravy. You can also add herbs, spices, and vegetables to the gravy for extra flavor.

Conclusion:

With these tips, you'll be able to cook a perfect Thanksgiving turkey dinner that your family and friends will love. So gather your ingredients, preheat your oven, and get ready to enjoy a delicious and memorable meal.
