BEST TOMATO SOUP EVER

Time 25m

Yield 6 to 8 servings

Number Of Ingredients 11

1 medium white or yellow onion
6 tablespoons (3/4 stick) butter
Two 14.5-ounce cans diced tomatoes
One 46-ounce bottle or can tomato juice
3 to 6 tablespoons sugar
1 or 2 tablespoons chicken base, or 3 chicken bouillon cubes
Freshly ground black pepper
1 cup sherry, optional
1 1/2 cups heavy cream
1/4 cup chopped fresh basil
1/4 cup chopped flat-leaf parsley

Steps:

  • To begin, dice the onion. Melt the butter in a large pot or Dutch oven. Throw in the onion and cook until translucent.
  • Now dump in the diced tomatoes and stir to combine. Add the tomato juice.
  • Next - and this is important - in order to combat the acidity of the tomatoes add 3 to 6 tablespoons of sugar. Now, you'll want to start on the low side, then taste and add more as needed. Some tomatoes and juice have more of an acidic bite than others. (For what it's worth, and I realize it's not worth much, I use 6 tablespoons of sugar.)
  • Next, add 1 or 2 tablespoons chicken base to the pot. I added 3, and it wound up being a little too much.
  • Now you can add lots of freshly ground black pepper. Stir to combine, then heat almost to a boil. Then turn off the heat.
  • Add in the sherry if desired. Stir in the cream. Add the basil and parsley and stir.
  • Serve the soup warm!

THE BEST TOMATO SOUP EVER

Categories     Soup/Stew     Tomato     Quick & Easy     Lunch

Yield 6 bowls

Number Of Ingredients 6

3 lbs. onion (sliced)
28 oz can whole tomatoes
6 cups chicken broth
1 stick butter
2 Tbl chile oil
1 chipotle pepper

Steps:

  • Place a large stock pot over low/medium heat. Melt butter and chile oil. Add onions to caramelize stirring every 5 minutes (should take about 30 minutes). When onions are sweet and caramelized, add tomatoes and stock and bring to a boil. Lower heat and simmer for 10 minutes. Allow to cool and puree soup with an emersion blender. For a more smooth soup, strain through sieve.

Tips:

  • Use fresh, ripe tomatoes: The quality of your tomatoes will greatly impact the flavor of your soup. Choose tomatoes that are bright red and have a firm texture.
  • Roast the tomatoes: Roasting the tomatoes intensifies their flavor and sweetness. You can roast them in a single layer on a baking sheet at 400°F for 30-40 minutes, or until they are slightly charred and softened.
  • Use a good quality broth: The broth is the base of your soup, so it's important to use a good quality one. Look for a broth that is low in sodium and has a rich flavor.
  • Don't overcook the soup: Tomato soup is best when it is cooked just until the tomatoes are heated through. Overcooking the soup will make it lose its bright red color and fresh flavor.
  • Season the soup to taste: Add salt, pepper, and other seasonings to taste. You can also add a pinch of sugar to balance out the acidity of the tomatoes.
  • Garnish the soup with fresh herbs: Fresh herbs like basil, parsley, or chives add a bright pop of color and flavor to tomato soup. You can also add a swirl of cream or a dollop of sour cream.

Conclusion:

Tomato soup is a classic comfort food that is easy to make and loved by people of all ages. With its rich, flavorful broth and tender tomatoes, it's the perfect soup for a cold day or a quick and easy meal. So next time you're looking for a delicious and satisfying soup, give this recipe a try. You won't be disappointed!
