I got this recipe from a friend more than 20 years ago and it remains a family favorite espcially on hot summer days. I cook the beef early in the morning. Sometimes even chop all of the ingredients then, too, so all I have to do is throw everything together when it is time for dinner. Teenagers especially love this. That is a bonus! Have yet to find anyone who doesn't love this super easy salad for dinner.

1 lb ground beef
1 (1 1/4 ounce) envelope taco seasoning (I use Taco Seasoning Mix)
1 head iceberg lettuce, chopped
2 -3 roma tomatoes, diced
6 green onions, chopped (I like more)
1 (15 ounce) can red kidney beans or 1 (15 ounce) can black beans, drained
1 (15 ounce) can large black olives, sliced
1 cup cheddar cheese, shredded
1 (16 ounce) bottle Catalina dressing (I use Kraft)
1 (14 1/2 ounce) bag plain Doritos, crumbled into big chunks

Steps:

  • Brown ground beef, drain grease, adding taco seasoning and following directions on package. Chill.
  • When ground beef is cold, place in a large bowl and add all remaining ingredients.
  • Mix well and serve.

I have experimented for a long time perfecting this recipe. I finally have the secret! I am requested to bring this to every pot luck, family dinner, etc. You won't be disappointed!

1 head lettuce, washed & drained well
1 (8 ounce) container grape tomatoes
1 (12 ounce) bag Doritos (I prefer Pepper Jack or Extra Nacho)
2 cups grated sharp cheddar cheese
1 (8 ounce) bottle fat-free Catalina dressing (regular makes it way too greasy!!)
1/2 lb ground beef
taco seasoning

Steps:

  • Brown ground beef and drain. Add taco seasoning - follow package directions. Alow to cool slightly or put in refrigerator if you don't want to use the salad right away.
  • TEAR lettuce into bite size pieces, but into bowl. Cut tomatoes in half, and spread out on top of lettuce. Put cheese on top of tomatoes. Cover and chill until ready to serve. Just before serving, add Doritos, meat (if refrigerated, use microwave to take chill off of meat), and salad dressing. Toss well!
  • Don't skimp on the cheese or doritos, the more the better! I use the whole bag of Dorito's. Not snack size, or Extra large, just the regular size bag -- .

1 lb hamburger or ground chuck, cooked and drained
1 head of lettuce-chopped
1 small can of black olives-drained
1 medium onion-chopped
1 medium tomato-chopped
1 pkg taco seasoning mix
1 can(s) kidney beans-rinsed and drained
2 c shredded cheddar (or your favorite cheese)
1 bag of nacho flavored doritos-coarsely broken
1 bottle small- catalina dressing

Steps:

  • 1. COOK 1 LB. HAMBURGER WITH ONE PACK OF TACO SEASONING ACCORDING TO DIRECTIONS. WHEN DONE, ADD KIDNEY BEANS AND REMOVE FROM HEAT. IN LARGE BOWL MIX ALL OTHER INGREDIENTS BUT DRESSING AND CHIPS. ADD MEAT MIXTURE. TOP WITH CHIPS THEN THE DRESSING. STIR UNTIL COMBINED AND ENJOY!!!!! NOTE**** YOU MAY WANT TO ADD MORE DRESSING DEPENDING ON THE SIZE OF THE HEAD OF LETTUCE. YOU WANT EVERYTHING TO HAVE DRESSING ON IT BUT YOU DON'T WANT IT SOGGY. IF TAKING THIS SOMEWHERE ELSE, KEEP MEAT AND BEANS IN ONE CONTAINER, LETTUCE IN A SEPARATE CONTAINER, AND ALL OTHER VEGGIES IN AL LARGE BOWL. 2 lbs hamburger
2 (1 1/4 ounce) packages taco seasoning
onion, cut up
lettuce
2 tomatoes
8 ounces cheddar cheese (I use 8 oz bag and use the whole bag)
dorito tortilla chips
western French dressing, i use the largest size and sometimes add a touch more from a smaller bottle

Steps:

  • Cook 2 pounds of hamburger the night before you will eat this then add the 2 packages of taco seasoning.
  • Right before you eat it add your cut up onion, lettuce, shredded cheddar cheese, I crunch the dorito's in the bag and then add the western dressing.
  • It is the best taco salad you will ever eat.
  • I put 8 hours for the time that I chilled the hamburger meat and taco seasoning.
