- Remove the beef from the fridge 1-2 hours ahead of time to let it approach room temperature for even cooking.
- Preheat oven to 450°F. Set aside a roasting pan with a wire rack. (If you don't have a rack, you can strew thick cut onion and carrots underneath the meat instead.)

- Put the beef in the prepared roasting pan with optional carrots and onions. Then roast for 15 minutes at 450°F.
- Reduce heat to 325°F and continue cooking for 60-90 minutes more, or about 20 minutes per pound. It's done when the internal temperature reaches 125°F as measured with an instant or wireless thermometer.
- Optional: Halfway through cooking, baste the meat by spooning pan juices on top. (If there aren't many juices, add 1/2 cup of water or broth to the pan.)
- Remove the roast from the oven. Tent with aluminum foil to keep warm and rest for 15 minutes to let the juices redistribute through the meat.
- Slice thinly crosswise against the grain to serve. Save the pan juices for gravy or serve au jus.

- Preheat oven to 400 degrees F (200 degrees C). Secure roast with cooking twine.
- Make 8 (1/2 inch) slits around the roast, and insert 1/2 garlic clove into each slit. Sprinkle with fresh ground pepper. Place on a rack in roasting pan.

- Remove roast from fridge and place on a rack for thirty minutes to come closer to room temp (skip this step if in a hurry).
- Heat a cast iron skillet or sturdy Dutch oven over medium high heat about five minutes. Meanwhile, pat dry the roast so it will brown properly.
- Sprinkle kosher salt over hot pan, and add roast, browning on both sides.
- Meanwhile, slice onion and mushrooms. Set aside.
- When roast is brown, remove to crock pot; turn on low.
- Add onions and mushrooms to skillet, without wiping it first. Cook, stirring frequently, until onions are brown and mushrooms have given up their liquid. The mixture should be dry but not burnt.
- Add water and stir, scraping bottom of pan to get all of the flavorful bits.
- Pour hot onion mixture over roast. Cook on low eight hours (or high for four).
- If you want to make gravy, drain the liquid off the roast at the end of the cooking time, into a liquid cup measure. You should have about two cups. Add water if necessary or remove excess liquid until you do have two cups. Melt two tablespoons butter in a skillet or medium saucepan. When foam subsides, add three tablespoons all purpose flour. Stir a few minutes to cook the flour, then whisk in liquid slowly to avoid lumps. Cook until thick and serve over meat and mashed potatoes or rice.

- Place tips in a plastic bag, add flour, salt and pepper and shake well, insuring that all tips are coated.
