THE BEST THAI CURRY-PEANUT SAUCE

The Best Thai Curry-Peanut Sauce image

I received a basic thai peanut sauce recipe from a very kind friend back in Oregon who worked at a popular Thai restaurant there and modified it with my own taste. Made this a lot of times and always got rave reviews, try it and you won't regret it!

Number Of Ingredients 10

1 tablespoon vegetable oil
1 ½ tablespoons minced garlic
2 tablespoons red curry paste
1 ¼ cups creamy peanut butter
¾ cup brown sugar
½ teaspoon chili powder
½ teaspoon cayenne pepper
½ tablespoon fish sauce
1 teaspoon sesame oil
3 (13.5 ounce) cans coconut milk

Steps:

  • Heat the oil in a large skillet over medium heat. Stir in the garlic, and cook until the aroma of the garlic has mellowed, about 1 minute. Add the red curry paste, and stir for 1 minute more. Bring to a simmer, whisking occasionally, until the sauce has thickened and is smooth.

Tips:

  • Choose the right peanuts: Raw, unsalted peanuts provide the best flavor and texture for peanut sauce. Dry-roasted peanuts can also be used, but avoid using salted or flavored peanuts, as these can overpower the other ingredients.
  • Toast the peanuts: Toasting the peanuts before making the sauce enhances their flavor and aroma. You can toast them in a pan over medium heat, stirring constantly, or in the oven at 350°F for 10-15 minutes, until they are golden brown and fragrant.
  • Use a high-quality peanut butter: If you are short on time or don't have peanuts on hand, you can use a high-quality peanut butter as a substitute. Be sure to choose a peanut butter that is unsweetened and has no added oils or sugars.
  • Add some heat: If you like your peanut sauce with a little kick, you can add some chili peppers or Sriracha sauce. Start with a small amount and gradually increase it to taste.
  • Adjust the consistency: The consistency of your peanut sauce should be thick and creamy, but not too thick or thin. If it's too thick, you can add some water or broth to thin it out. If it's too thin, you can add more peanut butter or peanuts.

Conclusion:

Peanut sauce is a versatile and delicious sauce that can be used in a variety of dishes, from stir-fries to noodle bowls to satay. It's also a great dipping sauce for appetizers like spring rolls or chicken satay. With its rich, creamy flavor and nutty aroma, peanut sauce is sure to be a hit with your family and friends. So next time you're looking for a quick and easy sauce to add some flavor to your meal, give peanut sauce a try. You won't be disappointed!
