2 cups quick-cooking oats
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup unsalted butter or 1 cup margarine
1 cup Skippy creamy peanut butter or 1 cup chunky peanut butter
1 cup granulated sugar
1 cup firmly packed brown sugar
2 eggs
2 teaspoons vanilla extract
1 (12 ounce) package semi-sweet chocolate chips, i only use the bag though (optional, but highly recommended!)

Steps:

  • Preheat oven to 350°. In small bowl, combine oats, flour, baking powder, baking soda and salt; set aside.
  • In large bowl, with electric mixer on medium speed, beat Spread and Skippy ® Creamy Peanut Butter until smooth. Beat in sugars, then eggs and vanilla until blended. Beat in flour mixture just until blended, then stir in chocolate.
  • On ungreased baking sheets, drop dough by rounded tablespoonfuls, 2 inches apart.
  • Bake 13 minutes or until golden. Remove cookies to wire rack and cool completely.

3/4 c peanut butter, creamy (i use jif or kroger's)
1/2 c butter flavor crisco
1 1/4 c brown sugar, firmly packed
3 Tbsp milk
1 Tbsp vanilla extract
1 large egg
1 3/4 c all purpose flour
3/4 tsp baking soda
1/2 tsp salt

Steps:

  • 1. Heat oven to 375^. Combine peanut butter, shortening, brown sugar, milk and vanilla in large bowl. Beat at medium speed with your electric mixer until well blended. Add egg. Beat just until blended.
  • 2. Combine flour, baking soda and salt. Add to creamed mixture at low speed. Mix just until blended.
  • 3. Drop by rounded measuring Tablespoon of dough 2 inches apart onto a lightly greased baking sheet.
  • 4. Flatten slightly in a crisscross pattern with the tines of a fork. Bake for 7 to 10 minutes or until set and just beginning to brown.
  • 5. Cool 2 minutes on baking sheet before removing to rack or paper to cool completely.
