1 1/2 -2 pounds flank steak
1/2 cup olive oil
1/3 cup reduced sodium soy sauce
1/4 cup balsamic vinegar
2 tablespoons lemon juice
2 tablespoons brown sugar
1 1/2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 TBS EACH onion powder, garlic powder
1 tsp EACH paprika, pepper, red pepper flakes, dried dill weed
1/2 tsp EACH dried oregano, dried rosemary, ground coriander

Steps:

  • Whisk marinade ingredients together in a freezer size ziploc bag. Reserve 2 tablespoons to use later. Add steak, press out excess air and seal. Massage marinade into the steak with your hands through the outside of the bag.
  • Marinate in the refrigerator at least 2 hours or up to 12 hours.
  • Preheat outdoor grill (or indoor grill pan) to medium-high heat, (450 degrees F when lid is closed).
  • Grill steak for 5-6 minutes per side, or until an internal thermometer reads 130-135 degrees F for medium rare or around 140 degrees for medium. Grill time will vary depending on thickness of your steak and desired level of doneness.
  • Remove the steak to a cutting board and let rest for 10 minutes before slicing. Slice steak into thin strips against the grain (perpendicular to the long strands) or ½-inch cubes. Drizzle with the 2 tablespoons reserved marinade.

I had two marinade recipies that we 'kinda' liked, but they both lacked a little something although we liked elements of both. So, I combined and tweaked until we had our now 'favorite' marinade. It is a bit spicy and tangy and full of flavor! This is the one my husband asks for over and over. We like it best on flank steak but you could use it on any beef cut or even pork.

3-4 pound(s) beef flank steaks
- salt and pepper
6 tablespoon(s) hot sauce such as tabasco
6 tablespoon(s) worcestershire sauce
2 tablespoon(s) garlic salt
2 tablespoon(s) ground pepper
6 ounce(s) pineapple juice
1/3 cup(s) lime juice
1/4 cup(s) steak sauce

Steps:

  • Score flank steaks by making shallow diagonal cuts on one side at 1-inch intervals in a diamond pattern. Repeat on other side. This is optional, but it makes a beautiful presentation and helps the marinade flavor the meat more deeply.
  • Sprinkle with salt and pepper. Place meat in plastic bag set in shallow dish.
  • Combine all remaining ingredients for marinade into plastic bag with meat. Seal bag and store in refrigerator 4 to 24 hours, turning occasionally.
  • Drain meat, discarding marinade. Grill meat on grill over medium heat (or broil on medium-high)until desired doneness, turning once (about 12-14 minutes for medium). Allow steaks to cool for 3-5 minutes after removing from grill before slicing.
  • Slice flank steaks thinly across grain. An electric knife helps to slice very thinly if available. Serve with a garish of fresh parsley or cilantro and sliced fresh pineapple if desired.

⅓ cup soy sauce
¼ cup red wine vinegar
2 tablespoons fresh lemon juice

Steps:

3 tablespoons olive oil
3 tablespoons balsamic vinegar
3 tablespoons soy sauce

1 teaspoon black pepper
½ teaspoon chili flakes (optional)

Steps:

  • Lightly score steak in a 1" diamond pattern, about ⅛" deep.

1 1/2 lbs flank steaks, trimmed
1 lemon, juice of
1/2 cup soy sauce
1/4 cup dry red wine
3 tablespoons extra virgin olive oil
2 tablespoons Worcestershire sauce
3 tablespoons honey
1 garlic clove, minced
1/2 inch fresh ginger, grated

Steps:

  • Mix all ingredients (not the steak) in a large Ziplock baggie. Add the steak and marinate for 2 1/2 hours to 2 days.
