1 1/2 teaspoons Baking Powder

1/4 teaspoon Pepper
1 Egg (Large)
1 cup Buttermilk
4 tablespoons Butter (Cold and cut into small cubes)
Tarter Sauce (for serving)

Steps:

  • Preheat 2 inches of oil in a large skillet to 365 degrees. In a medium sized mixing bowl add the flour, cornmeal, sugar, baking powder, salt, garlic powder, onion powder, paprika, and pepper. Add the egg and buttermilk and stir until combined. Stir in cubed butter.
  • Drop the batter by rounded teaspoonfuls in the hot oil. Let cook until they are golden brown 2-3 minutes. Remove with a metal strainer on a paper toweled lined plate. Serve with tarter sauce if desired.

2 cups cornmeal
1 tablespoon all-purpose flour
2 teaspoons baking powder
9 tablespoons finely chopped onion
1 teaspoon salt
1/4 teaspoon ground red pepper
1 cup milk

Steps:

  • Pour vegetable oil into a deep fryer or heavy-bottomed pot until the oil is 3 to 4 inches deep.
  • Heat the oil to 350°F.
  • In a medium bowl, stir together the cornmeal, flour, baking powder, onion, salt, and ground red pepper.
  • Add the milk and stir to combine.
  • Drop heaping spoonfuls of the batter into the hot oil. Fry only a few at a time for best results. If you add too many at once the oil temperature may drop and they make not cook well.

1 (15-ounce) can creamed corn
2 large eggs, lightly beaten
Salt and freshly ground black pepper
Paula Deen's Sweet and Spicy Chili Sauce, for dipping, optional

2 Tbsp sugar
1 egg
1/4 c chopped jalepeno peppers

2 oz niblet corn (drained)
milk (only enough to make consistency right)
