I have been making fried green tomatoes for over 35 years, taught by my grandmother who is from down south. Over the years I have tried and made fried green tomato recipes and this is the one that is perfect. Cajun ranch sauce goes perfect with this crispy on the outside but smooth and creamy on the inside tomato.

4 green tomatoes, cut into 1/4-inch slices
salt and ground black pepper to taste
1 cup all-purpose flour
2 teaspoons salt, divided
2 teaspoons ground black pepper, divided
1 cup buttermilk
1 cup cornmeal
1 teaspoon dried parsley

½ teaspoon cayenne pepper
2 cups canola oil, or as needed
½ cup ranch dressing
2 tablespoons Cajun seasoning
2 teaspoons hot pepper sauce

Steps:

  • Season tomato slices with salt and pepper.

  • Dredge each tomato slice in the flour mixture to coat, dip into the buttermilk, and finish by pressing each side of the tomato into the cornmeal mixture to coat. Lay coated tomato slices onto a baking sheet; rest to let tomatoes absorb flavor of coating, 10 to 15 minutes.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Gently drop tomato slices into the hot oil and cook until golden brown and floating, 2 to 3 minutes. Drain on a plate lined with paper towel.
  • Whisk ranch dressing, cajun seasoning, and hot pepper sauce together in a small bowl; serve with the fried tomato slices.

Oil
4 green tomatoes, cut into 1/4-inch rings
Kosher salt and freshly ground black pepper
3/4 cup all-purpose flour
1 tablespoon garlic powder
4 eggs
2 tablespoons milk
1 1/2 cups panko bread crumbs
Pinch cayenne pepper
Pinch paprika
Buttermilk Dipping Sauce, recipe follows

4 scallions, sliced thin
Kosher salt and freshly ground black pepper

Steps:

In another dish, mix bread crumbs with cayenne and paprika. Dredge tomatoes through the flour, then the eggs, and then through the bread crumbs. • In a small saucepan over medium heat, combine the apple cider and brown sugar. Allow to reduce until thick and syrupy. Remove from heat and allow to cool.
  • In a medium bowl, add buttermilk, mayonnaise, BBQ sauce and lime juice and whisk well. Add in the scallions and the apple cider mixture. Cover and refrigerate until ready to serve with Fried Green Tomatoes.

BEST FRIED GREEN TOMATOES ON THE PLANET!!!

Best Fried Green Tomatoes on the Planet!!! image

After trying Fried Green Tomatoes in several restaurants I finally broke down & threw this together to see if I could do better & voila! Best I've ever had so do try this & be sure to get ripe green tomatoes (or striped heirlooms) from your local farmer's market. That's the only way to enjoy them. Some places will cheat & use regualr tomatoes that aren't ripe (so they're still green) and the flavor is just awful. You really have to have ripe green ones to do it justice... My favorite is Giant German Green & I used to grow them at home but the squirrels & rabbits have done my garden in so I have to make the trip to Tom's Farms. Well worth it! Hope you enjoy! Oh, hey, if you like add a few drops hot sauce to the egg, try without first. If you have any bacon fat the flavor is worth it to add a bit of that to butter & oil.

Yield 2 plates, 2 serving(s)

Number Of Ingredients 8

2 tablespoons extra virgin olive oil

2 eggs
4 ripe green tomatoes (or striped heirloom)
1 cup Italian seasoned breadcrumbs
1/4 cup parmesan-romano cheese mix, grated
1 tablespoon fresh coarse ground black pepper
2 teaspoons kosher salt (or to your taste, start small)

Steps:

  • In a quart storage bag mix bread crumbs, cheese, salt & pepper.
  • Beat eggs or mix 'em all up in a bag of their own until well blended.
  • Slice tomatoes about 1/2" thick & place in egg, remove & place in bread crumb mixture individually and shake until well coated.

Tips:

  • Choose the right tomatoes: Select firm, unripe green tomatoes that are about 2-3 inches in diameter. Avoid tomatoes that are too ripe, as they will be too soft and mushy when fried.
  • Slice the tomatoes evenly: Cut the tomatoes into 1/2-inch thick slices. This will help them cook evenly and prevent them from falling apart.
  • Coat the tomatoes in flour: Dredge the tomato slices in flour before frying. This will help create a crispy crust and prevent the tomatoes from sticking to the pan.
  • Use a well-seasoned cast iron skillet: Cast iron skillets are the best choice for frying green tomatoes because they distribute heat evenly and retain heat well. Make sure the skillet is well-seasoned before using.
  • Fry the tomatoes in hot oil: Heat the oil in the skillet over medium-high heat until it reaches 350 degrees Fahrenheit. Carefully place the tomato slices in the hot oil and fry them for 3-4 minutes per side, or until they are golden brown and crispy.
  • Drain the tomatoes on paper towels: Once the tomatoes are fried, remove them from the skillet and drain them on paper towels to remove any excess oil.

Conclusion:

Fried green tomatoes are a delicious and versatile dish that can be enjoyed as an appetizer, side dish, or main course. They are a great way to use up unripe green tomatoes and are a popular dish in the Southern United States. With the right ingredients and technique, you can make the best fried green tomatoes on the planet!
