Time 55m

Yield 8 to 12 servings

Number Of Ingredients 17

4 tablespoons (1/2 stick) butter
4 cloves garlic, minced
1 pound white mushrooms, quartered
1 cup dry white wine
1/2 teaspoon salt, plus more
1/2 teaspoon black pepper, plus more
1/4 cup flour
4 cups turkey or chicken broth, plus more if needed
One 8-ounce package cream cheese
3 cups leftover Thanksgiving turkey, shredded or diced
1 1/2 cups frozen green peas
1 cup grated Monterey Jack cheese
1 cup finely chopped black olives
1/2 cup grated Parmesan
4 slices bacon, fried and chopped
12 ounces thin spaghetti, broken in half and cooked
1 cup panko

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter in a large pot over medium heat and add the garlic.
  • Throw in the mushrooms, wine, salt and pepper, and cook them, stirring occasionally, until the liquid reduces by half, 3 to 4 minutes.
  • Sprinkle the flour all over, then stir to combine.
  • Pour in the broth, stir and continue to cook until the sauce is nice and thick, 3 to 4 minutes.
  • Add the cream cheese and stir until it mixes in. (Don't worry if it seems a little lumpy at first. That will go away!)
  • Add the turkey, peas, Monterey Jack, olives, Parmesan and bacon.
  • Stir until everything is well combined, then add salt and pepper to taste.
  • Add the spaghetti and stir to combine. If the mixture is too thick, splash in 1/2 cup of broth.
  • Pour the whole shebang into a large casserole dish and even out the surface.
  • Sprinkle on the panko breadcrumbs and bake it until the crumbs are golden brown and the casserole is bubbly, 20 to 25 minutes.
  • Serve it to hearty appetites!

Time 2h

Number Of Ingredients 12

1 box spaghetti
1/2 c butter
1/2 c celery, chopped
1/2 c onion, chopped
2 Tbsp worchestershire sauce
1 can(s) evaporated milk (12 0z)
1 can(s) cream of chicken soup, undiluted
1 can(s) cream of mushroom soup, undiluted
1 can(s) mushrooms, sliced
2 c shredded cheddar cheese
2 c cubed cooked turkey
1/4 c parmesan cheese

Steps:

  • 1. Cook the box of spaghetti according to package directions. Drain and set aside in a covered dish in order to not dry out.
  • 2. Saute celery and onion in butter until translucent. Set aside. Place soups, mushrooms, milk, Worchestershire sauce and cheese in a large sauce pan and heat until cheese is melted. Add celery/onion mixture, turkey and salt and pepper to taste. Finally add the cooked spaghetti. (you may want to hold some of the pasta out depending on how dry it looks when combined.
  • 3. Pour the entire contents in to a greased 9x13 pan spreading out evenly. Sprinkle a little parmesan cheese on top before placing in the oven. Cook for 30 minutes at 350 degrees. Remove from oven and let sit for 5 minutes before serving.

Tips:

  • Use fresh ingredients. The fresher your ingredients are, the better your tetrazzini will taste. If possible, use organic or locally grown ingredients.
  • Cook your turkey thoroughly. Turkey must be cooked thoroughly to prevent foodborne illness. Use a meat thermometer to ensure that the internal temperature of the turkey has reached 165 degrees Fahrenheit.
  • Use a good quality pasta. The type of pasta you use will affect the texture of your tetrazzini. Use a pasta that is firm and holds its shape well, such as penne or macaroni.
  • Don't overcook the pasta. Pasta should be cooked al dente, or slightly firm to the bite. Overcooked pasta will become mushy and ruin the texture of your tetrazzini.
  • Use a creamy sauce. The sauce is what makes tetrazzini so delicious. Use a creamy sauce made with butter, flour, milk, and cream. You can also add other ingredients to the sauce, such as cheese, mushrooms, or vegetables.
  • Serve tetrazzini immediately. Tetrazzini is best served immediately after it is made. The sauce will thicken as it cools, so if you need to make it ahead of time, reheat it gently over low heat before serving.

Conclusion:

Turkey tetrazzini is a classic comfort food that is perfect for a weeknight meal or a special occasion. It is easy to make and can be customized to your liking. With a few simple tips, you can make the best turkey tetrazzini that you have ever tasted.
