This is the best ever Italian Spinach. I believe it is very close to the recipe used by the Memphis resteraunt called Grisanti's. This recipe would also be VERY easy to double or triple. I hate eggs, and I love this recipe. My husband is not a huge 'green veggie' fan, and he loves this recipe. It is great, fast, easy, involves common ingredients, and will be a staple in your kitchen. I am going to try cooking in batches and putting in ziplocks to freeze (OAMC).

- Thaw spinach and squeeze out excess water.
- Now, squeeze some more and set aside.
- In a saute skillet, over medium heat, add olive oil and garlic.
- Cook until garlic is golden brown (don't burn it!).

Stir until the sugar caramelizes, about 3-5 minutes. Spread onto parchment paper. Separate pecans. Allow to cool. Meanwhile: in a pint size mason jar combine dressing ingredients. Seal and shake until well combined. Set aside on the counter. In a large bowl combine the spinach, onions, strawberries and blueberries. Pour about 1/2 of dressing over salad, and toss. Top with avocado, cheese and candied nuts. Serve remaining dressing on the side. Refrigerate for 15 minutes before serving (or serve immediately). Serve with the remaining dressing on the side. - in a large bowl, combine sour cream, soup mix, onions and mix very well.
- Drain and squeeze the moisture out of the spinach and add to sour cream mixture.
- mix very well.
- Add onion salt to taste.
- Refrigerate for at least an hour.
- Meanwhile, hollow out the pumpernickel round loaf.
- Tear the bread into bite size pieces.
- Cover so they don't get hard.
