THE BEST SLOPPY JOES

The Best Sloppy Joes image

This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

BEST EVER SLOPPY JOES

Best Ever Sloppy Joes image

These really are the best ever sloppy joes! Sassy, tangy, sweet and spicy with a great balance of flavors. Plus, this is a quick 'n easy one dish meal (don't mind the long list of ingredients, it really goes together quickly, I promise). The veggies get "sneaked in" & they contribute mellow depth of flavor, while providing valuable health benefits to your family (and nobody will be the wiser!). :) Serve hot on a warmed hamburger bun (we like soft potato buns) with or without shredded cheese, and a pickle spear on the side is good. YUM! I like to make a double batch, one for now and one for later because leftovers are super fabulous the next day (and it freezes beautifully, as well). Hope you enjoy as much as we do!! :)

My daughter, Tiffany, came up with this lower-fat version of traditional sloppy joes. Best of all, this recipe can be made ahead and frozen for real holiday convenience. However, the tangy kick from the orange peel may not appeal to all children. -Suzanne McKinley, Lyons, Georgia
