CHEF JOHN'S SHRIMP ETOUFFEE
We're going to use this spicy and delicious New Orleans classic to demonstrate that it is possible to get good results from using waterlogged frozen shrimp, which unfortunately is sometimes the only option. To make them work we've got to use a few tricks. I prefer this with little chunks of browned chicken or pork, actually.

THE BEST SHRIMP SCAMPI
A classic menu item from every great Italian-American restaurant, this shrimp scampi hits all the right notes - buttery, lemony, garlicky. We love it for its simplicity and balance of flavor (copious amounts of butter help, too!). But while it looks and tastes fancy, this dish is actually very easy to make. The white wine sauce gets a spicy finish from red pepper flakes, perfect for soaking up with good crusty bread or cooked pasta.

CLASSIC SHRIMP SCAMPI
Scampi are tiny, lobster-like crustaceans with pale pink shells (also called langoustines). Italian cooks in the United States swapped shrimp for scampi, but kept both names. Thus the dish was born, along with inevitable variations. This classic recipe makes a simple garlic, white wine and butter sauce that goes well with a pile of pasta or with a hunk of crusty bread. However you make the dish, once the shrimp are added to the pan, the trick is to cook them just long enough that they turn pink all over, but not until their bodies curl into rounds with the texture of tires.

Tips:
- Choose high-quality shrimp: Fresh, wild-caught shrimp are the best choice for this sauce. Avoid frozen or pre-cooked shrimp, as they will not have the same flavor or texture.
- Use a variety of vegetables: This recipe calls for bell peppers, onions, and garlic, but you can also add other vegetables such as carrots, celery, or zucchini.
- Make sure the sauce is thick enough: The sauce should be thick enough to coat the shrimp and vegetables. If it is too thin, add a cornstarch slurry (a mixture of cornstarch and water) to thicken it.
- Serve the sauce over rice or noodles: This sauce is delicious served over rice or noodles. You can also serve it with vegetables or fish.
Conclusion:
This shrimp sauce is a quick and easy recipe that is perfect for a weeknight meal. It is also a great way to use up leftover shrimp. The sauce is flavorful and versatile, and can be served over rice, noodles, or vegetables. With its combination of fresh shrimp, colorful vegetables, and a flavorful sauce, this dish is sure to be a hit with the whole family.
