I switched this up a bit and added peas and corn with the carrots. I also left the skin on the potatoes. Overall very creamy and good. Recipe courtesy of Taste of Home. Next time I'll skip the Velveeta and add real cheese.

Time 1h30m

Yield 6-8 serving(s)

Number Of Ingredients 12

1 stalk celery, chopped
1 carrot, finely chopped
1 small onion, chopped
1 tablespoon dried parsley
1 quart chicken stock
1 teaspoon salt
1/4 teaspoon pepper
6 -8 potatoes, cubed
6 slices bacon, cooked and crumbled
4 cups milk
4 tablespoons flour
1 1/2 cups Velveeta cheese, cubed

Steps:

  • In a large pot, add the celery, carrot, onion, parsley salt, pepper, potatoes and stock.
  • Cover, bring to a boil and cook for about 20 min.
  • until the vegetables are tender.
  • Add the bacon.
  • Mix the flour into the milk until well blended.
  • Add to the soup and stir well.
  • Add the cheese and heat until melted.

Tips:

  • Use a variety of potatoes: Different types of potatoes have different flavors and textures, so using a mix can create a more complex and interesting soup. For example, Yukon Gold potatoes are known for their creamy texture, while russet potatoes are more starchy and hold their shape better.
  • Don't overcook the potatoes: Overcooked potatoes will become mushy and lose their flavor. Cook them just until they are tender when pierced with a knife.
  • Use a good quality broth: The broth is the base of the soup, so it's important to use a good quality one. Look for a broth that is low in sodium and has a rich flavor.
  • Add your favorite toppings: Once the soup is cooked, you can add your favorite toppings to taste. Some popular options include shredded cheese, crumbled bacon, chopped chives, or sour cream.

Conclusion:

Potato soup is a classic comfort food that is easy to make and can be enjoyed by people of all ages. With its creamy texture and hearty flavor, it's the perfect meal for a cold winter day. Whether you're using a traditional recipe or trying something new, there are endless possibilities when it comes to making potato soup. So get creative and experiment until you find a recipe that you love.
