Steps:
- Place sugar, cream of tartar or corn syrup, salt, water and egg whites into a mixing bowl and beat for 1 minute with a handheld electric mixer.
- Using the double boiler method, place the bowl over the top of rapidly boiling water, making sure that boiling water does not touch the bottom of the top bowl. Remove the bowl from the boiler and gently stir in vanilla with a spatula.

WHOOPIE PIES WITH 7 MINUTE FROSTING
Great served for the Fourth of July for a true American treat! A whoopie pie, sometimes alternatively called a gob or a black-and-whitie, is a baked good traditional to the Pennsylvania Dutch culture as well as New England, made of two small, chocolate, disk-shaped cakes with a sweet, creamy frosting sandwiched between them. I came up with this recipe when my sister didn't want these because of the trans fats and corn syrup in the typical recipe. Here you have them! Not totally guilt-free but the Fourth of July come but once a year!

Steps:
- Cake:.
- Heat oven to 350°F.
- Grease two large cookie sheets or line 2 baking sheets with parchment and set aside.
- In a large bowl with mixer at medium speed sugar and vegetable oil. Gradually beat in beat egg and continue beating until pale yellow in color. In another bowl, combine flour, cocoa, baking powder, baking soda and salt. In a measuring cup combine milk and vanilla. Add flour and milk mixtures alternately to eggs and sugar, beginning and ending with dry ingredients. Drop by tablespoons onto cookie sheet. These will spread a lot, so make 6 cakes per sheet at a time. Bake about 5 minutes or until top springs back when lightly touched with finger. Remove to wire racks to cool. When cool, use filling and two cakes to make sandwiches.
- Filling:.
- Place sugar, cream of tartar, salt, water, and egg whites in the top of a double boiler. Beat with a hand held electric mixer for 1 minute. Place pan over boiling water, being sure that boiling water does not touch the bottom of the top pan. (If this happens, it could cause your frosting to become grainy). Beat constantly on high speed with electric mixer for 7 minutes. Beat in vanilla.

SEVEN-MINUTE FROSTING

Steps:
- Bring a few inches of water to a boil in a medium saucepan over medium-high heat. Whisk the egg whites, sugar, water, corn syrup, vanilla, cream of tartar and salt in a large heatproof glass bowl. Set the bowl on top of the pan (do not let the bottom of the bowl touch the water). Beat with a hand mixer on low speed until the sugar dissolves and the mixture starts to thicken, 1 to 2 minutes. (If any sugar crystals form on the side of the bowl, brush them down with a wet pastry brush.) Increase the speed to medium high and beat until stiff glossy peaks form, about 7 minutes.
- Remove the bowl from the pan and beat until the frosting cools slightly, about 30 seconds. Use while still slightly warm -- the frosting will firm up and form a hard shell when it cools. Do not refrigerate the frosted cake or the frosting may weep.

Steps:
- In a small, heavy-bottom saucepan, combine 3/4 cup sugar, corn syrup, and 4 tablespoons water. Place over medium heat, stirring occasionally, until sugar has dissolved, about 4 minutes. Rub a bit of the mixture between your fingers, making sure any graininess has disappeared. Raise heat, and bring to a boil without stirring. Continue boiling, occasionally washing down the sides of the pan with a pastry brush dipped in cold water to prevent sugar from crystallizing, until a candy thermometer registers 230 degrees, about 5 minutes. (Depending on the humidity, this can take anywhere from 4 to 10 minutes.) Remove the syrup from heat (temperature will keep rising).
- Meanwhile, in the bowl of an electric mixer, whisk the egg whites on medium speed until soft peaks form, about 2 1/2 minutes. Gradually add remaining 2 tablespoons sugar. With mixer on medium-low speed, pour syrup in a steady stream down side of bowl (to avoid splattering).
- Beat the frosting on high speed until cool, about seven minutes. It should be thick and shiny. Use immediately.
Tips:
- For a richer flavor, use high-quality dark chocolate.
- Make sure the butter is cold and cut into small pieces before adding it to the flour mixture. This will help create a flaky crust.
- Don't overmix the dough. Overmixing will make the crust tough.
- Bake the crust until it is golden brown. This will help prevent it from becoming soggy.
- Use a good quality chocolate for the filling. This will make a big difference in the flavor of the pie.
- Make sure the sugar and cornstarch are dissolved in the milk before adding it to the chocolate. This will help prevent the filling from curdling.
- Cook the filling until it is thick and bubbly. This will help ensure that it sets properly.
- Let the pie cool completely before serving. This will help the filling to set and the flavors to develop.
Conclusion:
This classic chocolate pie is a delicious and easy-to-make dessert that is perfect for any occasion. With its flaky crust, rich chocolate filling, and fluffy seven-minute frosting, this pie is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give this chocolate pie a try. You won't be disappointed!
