4 tablespoons olive oil
5 cloves garlic, finely minced
1 pint red grape tomatoes, halved lengthwise
1 whole baguette or crusty loaf
1 pint yellow grape tomatoes, halved lengthwise
1 tablespoon balsamic vinegar
16 whole fresh basil leaves, plus more as needed, chiffonade
Salt and freshly ground black pepper
1 stick butter

Steps:

  • In a small skillet, heat the oil over medium-high heat. Add the garlic and stir, lightly frying for about a minute, removing before the garlic gets too brown (it can be golden). Pour the garlic and oil into a mixing bowl and allow to cool slightly.
  • Add the red and yellow tomatoes, balsamic and basil to the bowl. Sprinkle with salt and pepper. Toss to combine, and then taste and add more basil if needed, and more salt if needed (don't over salt, though!) Cover and refrigerate for an hour or two if you have the time.
  • Cut the baguette into diagonal slices to allow for the most surface area possible. Melt 4 tablespoons of the butter in a large skillet and grill half the bread on both sides, making sure they're nice and buttery. Cook until golden brown on both sides. Repeat with the remaining 4 tablespoons butter and the other half of the bread.
  • To serve, give the tomato mixture a final stir, and then spoon generously over the slices of bread. Serve on a big platter as a first course or appetizer.

½ small red onion, finely chopped
8 medium tomatoes (about 500g), coarsely chopped and drained
2-3 garlic cloves, crushed
6-8 leaves of fresh basil, finely chopped
30ml balsamic vinegar
60-80ml extra virgin olive oil
1 loaf crusty bread

Steps:

  • In a large bowl, mix the onions, tomatoes, garlic and basil, taking care not to mash or break up the tomatoes too much. Add the balsamic vinegar and extra virgin olive oil. Add salt and pepper to taste. Mix again. Cover and chill for at least an hour. This will allow the flavours to soak and blend together.
  • Slice the baguette loaf diagonally into 12 thick slices and lightly toast them until they are light brown on both sides. Serve the mixture on the warm slices of bread. If you prefer the mixture at room temperature, remove from the fridge half an hour before serving.

3 cups tomatoes, chopped and drained
1/2 cup fresh basil, chopped finely
2 -3 tablespoons garlic, crushed (I get the kind in the jar, it has a good flavor and is eaiser than doing it yourself)
1/4-1/2 lb fresh mozzarella cheese, cut into small cubes
olive oil
balsamic vinegar
garlic salt (optional)
1 loaf Italian bread, cut into slices appx 1/2 inch thick
olive oil
garlic powder
parsley
paprika

Steps:

  • For The Bruchetta:.
  • Mix together tomatoes, basil, garlic, and cheese.
  • drizzle olive oil and vingar over the tomato mixture. You don't want to skimp but you don't want to go over board either. For 3 cups of tomato mixture I would reccomend about a cup of liquid. Appx 3/4 cup of oil and a 1/4c of vinigar but this is just an estimate. Go by your own preference.
  • Stir the ingredients.Taste it and add more oil, vinigar, as needed. You can also ad a little garlic salt if you think it needs salt.
  • For The Garlic Toast:.
  • Cut the bread slices in half so they are snack sized (if you used italian bread. If you use french bread the slices should be perfect sized).
  • Spread slices on a broiler pan, drizzle w/ olive oil, sprinkle with garlic powder, parsley, and a touch of paprika. Put under the broiler untli toasted but not burned.
