1 lb Eye of round
1 1/4 tsp sea salt
1/2 tsp onion powder
1/2 tsp garlic powder
1 tsp cracked black pepper
2 tsp granulated sugar
2 whole habaneros (3 if extra hot is wanted)
2 tbsp worcestershire sauce
3/4 cup cold water
1/4 tsp curing salt (optional)

Steps:

  • Trim all visible fat from the beef and place in freezer for an hour or two to partially freeze.
  • While the meat is in the freezer, combine marinade ingredients in a blender and blend until the peppers have been chopped into very small pieces. Place in a bowl or ziplock bag.
  • Remove the meat from the freezer and slice ¼" strips against the grain for an easy chew. Cut with the grain for a more chewy jerky.
  • Add sliced beef to the mixture in the ziplock bag or bowl and marinate for 8-24 hours in the refrigerator.
  • After the meat has finished marinating, remove from refrigerator and strain excess marinade in a colander and pat dry with paper towels.
  • Load dehydrator trays with jerky strips leaving room for air to circulate I used my Excalibur Dehydrator and dried for 3 hours at 165°F and 1 hour at 145°F
  • The jerky is finished when it bends and cracks, but does not break in half.

¾ cup Worcestershire sauce
¾ cup soy sauce
1 tablespoon smoked paprika, or to taste
1 tablespoon honey, or more to taste
2 teaspoons freshly ground black pepper
1 teaspoon red pepper flakes
1 teaspoon garlic powder
1 teaspoon onion powder
2 pounds beef top round, thinly sliced

Steps:

  • Whisk Worcestershire sauce, soy sauce, paprika, honey, black pepper, red pepper flakes, garlic powder, and onion powder together in a bowl. Add beef to bowl and turn to coat beef completely. Cover the bowl with plastic wrap and marinate in the refrigerator, 3 hours to overnight.
  • Preheat oven to 175 degrees F (80 degrees C). Line a baking sheet with aluminum foil and place a wire rack over the foil.
  • Transfer beef to paper towels to dry. Discard marinade. Arrange beef slices in a single layer on the prepared wire rack on the baking sheet.
  • Bake beef in the preheated oven until dry and leathery, 3 to 4 hours. Cut with scissors into bite-size pieces.

I have been making jerky for years. This is my recipe concocted by trial and error. Everyone who has tried it says it is the 'best jerky' they have ever had! My dehydrator is designed for jerky. It takes me about 4 hours to dry the meat. This could also be done in the oven or using other dehydrators. Please check your manual for correct times as each machine is different. I hope you enjoy this jerky as much as me and my family do.

2 pounds beef round steak, cut into thin strips
¼ cup soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons liquid smoke
2 tablespoons brown sugar
2 teaspoons salt

1 teaspoon meat tenderizer
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika

Steps:

  • Place beef strips in the bottom of a large bowl. Pour soy sauce, Worcestershire sauce, liquid smoke, brown sugar, salt, pepper, meat tenderizer, garlic powder, onion powder, and paprika over beef. Mix to assure all the meat is evenly coated. Cover and marinate in the refrigerator for 8 hours or overnight.
  • Remove meat from bowl and place between two pieces of plastic wrap; pound to 1/8-inch thickness.
  • Arrange the meat strips on the tray of a dehydrator and dry at your dehydrator's highest setting until done to your liking, at least 4 hours. Store in an airtight container or resealable bags.

2 pounds beef eye of round, trimmed of all fat
1 1/2 tablespoons kosher salt
2 teaspoons sugar
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon cayenne pepper
1 teaspoon chipotle chile powder
1/2 teaspoon ground coriander
1/2 teaspoon smoked paprika

Steps:

  • Slice the beef with the grain into strips about 1 inch thick by 3 inches long. If the strips appear too large, they likely are the correct size, as they will shrink significantly during the cooking process.
  • In a mixing bowl, mix the remaining ingredients. Liberally season the beef with this spice mixture, being sure to use it all. Cover the beef and refrigerate for 24 hours.
  • Preheat the oven to 250 degrees F. Put the beef strips on a baking rack-lined sheet pan. Arrange the meat so that the strips are not touching or overlapping. This allows for even drying. Bake for 6 to 7 hours, until fairly dry. If you prefer your jerky on the chewy side, remove it after 6 hours. Otherwise, leave it in for the full 7 hours to dry it out some more.
  • Divide the jerky among bags. Store the bags in an airtight container at room temperature; the jerky should keep for several months.

3/4 cup soy sauce
1 cup worcestershire sauce
3 tablespoons honey
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon chili flakes (optional)
1 tablespoon liquid smoke (optional)
2 teaspoons black pepper
1 teaspoon cayenne pepper (optional)

Steps:

  • In a large bowl or ziplock bag, stir together soy sauce, worcestershire sauce, honey, garlic powder, onion powder, chili flakes, liquid smoke, black pepper, and cayenne pepper.
  • Place sliced beef into the bowl and make sure all of the pieces are covered in the marinade. Cover or seal tightly. Refrigerate for a minimum of 6 hours, up to 36 hours total.
  • Remove from marinade and pat dry. Discard any remaining marinade.
  • Evenly distribute the meat onto dehydrator racks and let the meat dehydrate on a low heat setting. Dehydrate for 8-12 hours, or according to your dehydrator instructions. May need to rotate occasionally.
  • To check doneness, you want a slight bend to the jerky, but not any remaining juice, approximately 4-6 hours. Store in an airtight container for up to 2 weeks, or in the freezer for up to 3 months.

9 tablespoons light brown sugar
1 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
3 teaspoons onion powder
1 1/2 teaspoons garlic powder
3 teaspoons dry mustard
1 cup red wine vinegar
1 cup ketchup
1 tablespoon liquid smoke
3 lbs london broil beef or 3 lbs flank steaks, sliced into very thin strips

Steps:

  • Combine all ingredients (except the meat) until combined.
  • Add meat that has been thinly sliced (the meat is easier to slice when its half frozen) and marinade 24-48 hours, refrigerated.
  • Remove from marinade, disguarding excess.
  • Place onto food dehydrator trays, you'll know its done when it cracks when bent but does not break.
  • I have never "over dehydrated" my jerky, I always feel its better over dried than under dried. Mine usually takes about a day and a half to be fully done. Rotate trays for even dehydration.

  • Place beef brisket in the freezer for 1 hour to make slicing easier.
  • Place brisket on a flat work surface. Slice on the grain into the thinnest possible strips, about 1/4-inch-thick.
