7-8 large tart cooking apples (9 cups) (peeled, sliced to 1/4")
3/4 cup sugar
3/4 tsp cinnamon
2 cups all purpose flour
2 cups sugar
2 lg eggs
2 tsp baking powder
3/4 tsp salt
2/3 cup butter (melted)
ice cream if desired

Steps:

  • Pre-heat oven to 350°F.
  • Place sliced apples in ungreased 13x9-inch baking dish.
  • In a small bowl, mix together sugar and 1/2 teaspoon of cinnamon. Sprinkle over apples.
  • Combine remaining cinnamon, flour, sugar, eggs, baking powder and salt in bowl until coarse crumbs form. Spread over apples. Pour melted butter over topping. Bake at 350 for 50-60 minutes, until lightly browned and apples are tender.

Here in New England, Jiffy muffin mixes have been used in family recipes for many, many years and that's because the tasty boxes are so versatile. This particular flavor makes the cobbler taste so awesome. Not doughy or dry but dense and juicy and just plain the best!!!

10-12 apples, depending on size, i used a mix of a pples, macintosh, granny smith etc.. cored, peeled, thinly sliced
1-1/4 c packed, light brown sugar
2 tsp ground cinnamon
2 Tbsp softened butter, diced
2 box jiffy cinnamon-apple muffin mixes, do not substitute
2 stick melted butter
1-1/2 tsp pure vanilla
1-2 Tbsp flour, ( you don't really need this but i use it as a thickening agent.)

Steps:

  • 1. Heat oven to 375. Lightly spray a 9" x 13" baking pan w/ cooking spray. In a large bowl stir together apple slices, brown sugar, flour and cinnamon. Add diced, soft butter and mix together well.
  • 2. Spread apple mix into bottom of baking pan. In another large bowl, mix both boxes of muffin mix, melted butter and vanilla. Dough will be sticky. Drop dough by heaping tablespoons onto apple mix.
  • 3. Bake 30-45 mins depending on your oven, it took my oven 40 mins. Part way during baking I put a sheet of aluminum foil on top loosely so the top wouldn't brown too fast. I took it off the last 5 mins, Make sure the top is light golden brown and the apples are bubbly. This is best served warm.

1 tablespoon lemon juice

1/2 teaspoon salt

8 cups peeled tart apples, thinly sliced
2 tablespoons quick-cooking tapioca
1/2 teaspoon ground cinnamon
TOPPING:
1 tablespoon milk
3/4 teaspoon sugar
