6 large eggs
1/3 cup mayonnaise
1 stalk celery, finely chopped
1/2 small onion, finely chopped
1 tablespoon chopped fresh parsley or dill
2 teaspoons Dijon mustard
1 tablespoon lemon juice

Steps:

  • Cover the eggs with at least 2 inches of water in a medium saucepan and bring to a rolling boil. Remove from the heat, cover and let sit for 10 minutes. Transfer the eggs to a bowl of ice water to cool completely.
  • Mix together the mayonnaise, celery, onions, parsley, mustard, lemon juice, 1/2 teaspoon salt and a few grinds of black pepper in a medium bowl. Peel and roughly chop the eggs, add to the mayonnaise mixture and toss gently to combine. Serve right away, or cover and refrigerate for up to 2 days.

1 pound ground pork
1 teaspoon ground ginger
1 teaspoon garlic powder
1 quart peanut oil for frying
2 tablespoons all-purpose flour
2 tablespoons water
2 cups shredded cabbage
2 ounces shredded carrots
8 (7 inch square) egg roll wrappers
2 tablespoons sesame seeds

Steps:

  • Season pork with ginger and garlic powder and mix thoroughly. Heat mixture in a medium skillet, stirring, until pork is cooked through and no longer pink. Set aside.
  • In another large skillet heat oil to about 375 degrees F (190 degrees C) or medium high heat. While oil is heating, combine flour and water in a bowl until they form a paste. In a separate bowl combine the cabbage, carrots and reserved pork mixture. Mix all together.
  • Lay out one egg roll skin with a corner pointed toward you. Place about a 1/4 to 1/3 cup of the cabbage, carrot and pork mixture on egg roll paper and fold corner up over the mixture. Fold left and right corners toward the center and continue to roll. Brush a bit of the flour paste on the final corner to help seal the egg roll.
  • Place egg rolls into heated oil and fry, turning occasionally, until golden brown. Remove from oil and drain on paper towels or rack. Put on serving plate and top with sesame seeds if desired.

2 slices bread (multigrain is best)
1 tablespoon Cheez Whiz (or your favorite cheese)
salt and pepper (to taste)

Steps:

  • Melt margarine in frying pan.
  • Add egg (don't break the yolk, but if you do that is alright too!).
  • Gently fry the egg.
  • Sprinkle the egg with the salt, black pepper and red pepper flakes. (if you don't like hot, leave them off).
  • Flip the egg over. I like the yolk to be a bit soft. Polk the yolk after you have turned the egg so that a bit of the yolk seeps out.
  • Spread the Cheez Whiz on one side of the bread.
  • Put the egg on the bread and top with the other slice of bread. (I like the side with the pepper flakes to meet the Cheez Whiz).
  • Return the sandwich to your fryng pan and grill until golden, flip over and grill the other side. (I don't butter the sandwich before frying).

3/4 cup green onion, diced
1 celery rib, minced

Steps:

  • In a wok set over moderately high heat, add the ground ginger, onion, and celery and stir-fry for 1 minute. Add the cabbage and bean sprouts and stir fry 2-3 minutes more, or until vegetables are slightly softened. Add the pork and/or shrimp and stir-fry 1 minute more.
  • Add the chicken stock and sugar, bring the mixture to a boil and stir in the cornstarch mixture. Simmer until lightly thickened. Stir in sesame oil, salt and pepper to taste.
  • Have 1 cup water at a boil. Remove from heat and whisk in cornstarch mixture.
  • Have 12 egg roll wrappers ready under a dampened towel. Place a portion of the filing in a line diagonally across one corner of wrapper, brush with some of cornstarch paste and fold in the ends. Roll tightly to make a sealed cylinder. Repeat with remaining wrappers.
  • Heat oil to 350 degrees F. Fry egg rolls, in small batches, turning often, for about 4 minutes, or until golden brown. Transfer to paper towels to drain.

1/8 teaspoon salt
2 eggs, beaten
1/2 cup milk (almost room temperature)
1 tablespoon soft butter

Steps:

  • In a large bowl combine the flour with salt.
  • Add in eggs, milk and soft butter; mix to combine, then knead until smooth (this should take you about 5-6 minutes).
  • Cover with a clean tea towel and allow to rest for 10 minutes in the bowl.
  • Flour your work surface.
  • Place the dough on the surface.
  • Using a lightly-floured rolling pin roll out to about 1/8-inch thickness or as thin as possible.
  • Using a pizza cutter slice the dough into desired size strips (I do mine about 1/2-inch).

2 eggs, lightly beaten
1/2 cup cups sugar
1/4 cup water
1/4 cup cider vinegar (cider vinegar is a must)
1 teaspoon italian seasoning
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper

Steps:

  • Salad Greens -- Prepare your greens. Whatever you like. Tomato, bacon and onion are my favorites, but any of your favorites will work. This is about the dressing.
  • Dressing -- I make this in a small tupperware container or small microwavable bowl. Add all the ingredients and mix well. Heat on medium (power 4 or 5) for 30 seconds and stir well. Then heat again on medium power same thing just 30 seconds at a time and mix well. You do not want do scramble the eggs. Just a couple of times in the microwave to heat up the dressing is all you need. It should be served warm NOT boiled.
  • Serve -- Toss with the greens and ENJOY! One of my favorite dressings, and so easy.

This egg salad has a fun story behind it. It is also a true story! A lady at church was always asked to bring her absolutely Best Egg Salad. However she never divulged her Secret! When she passed the church members prevailed on her daughter to check her mother's recipes and please share The Secret! And she did.

6 hardboiled eggs, diced
1/4 c melted butter
1/2 c miracle whip, do not substitute
1/4 tsp. salt
1/4 tsp. lawry's seasoned salt
dash of garlic salt
dash of celery salt
1/4 tsp. dill weed
2 tbsp. grated onin
1/2 c chopped celery

Steps:

  • 1. Combine all ingredients and mix well. Refrigerate for about 20 minutes before using. Have you discovered The Secret Ingredient? It's the melted butter! Not only is the taste outstanding, but when this is refrigerated, the salad will never come squishing out of your sandwich.
