- In a heat-proof bowl, melt 1 stick of the butter in the microwave and allow it to cool.
- Add 1/4 cup warm (not hot) water, the yeast, and 2 tablespoons of sugar to a small bowl and stir slightly with fork. Set aside to proof.
- In a mixing bowl of a stand mixer fitted with a dough hook, put 3 cups of the flour with the salt, eggs (preferably at room temperature), 1 cup warm (not hot) water, 1 cup sugar, and the cooled melted butter. Mix well.
- Add the yeast mixture and gradually add the remaining 2 cups of flour and keep beating. Cook's Note: You may not need the whole 5 cups of flour; the stickier (not runny) the dough, the lighter the rolls.
- Transfer the dough to a large bowl and pour about 1/4 cup of oil over the dough. Cover with a plate and let rise, at least double or more its original size, about 2 hours.
- Preheat the oven to 350 degrees F.
- After the dough has risen, transfer it to a floured surface and knead it a little. Roll out the dough about 1/4-inch thick (or thinner). - Note: Due to its sticky nature, this recipe is best made in a standing mixer with a dough hook; the truly persistent could probably make this by hand with a bowl and a wooden spoon-- these rolls are worth the extra effort.
- Sprinkle the yeast over the warm milk and let sit for approximately 5 minutes to proof.
- Add sugar, 1/2 cup melted butter, salt and eggs; mix well.
- Add flour and mix well.
- Blend at medium-low speed for about 5-10 minutes, scraping down sides once or twice.
- Cover bowl with plastic wrap and a towel; let rise in bowl about 1 hour or til doubled.
- Remove the towel and plastic wrap and turn mixer on low to"punch down" the dough; if you wish, you can let the dough raise a second time as it makes for a more flavorful roll.
- Remove the dough from the bowl and divide into 36"plops"; The dough will be very sticky.
- Place"plops", edges just touching, in a buttered 9x13 baking pan; don't bother trying to smooth out the"plops"-- they will smooth out as they raise.
- Cover pan with plastic wrap and let rise til doubled, about 30-40 minutes.

- 1. Start by activating the yeast. Pour the yeast and water into a bowl.
- 2. Heat milk and butter in the microwave for 1 minute (do not boil).
- 3. Add to the yeast and water, egg, sugar, salt, and one cup of the flour. Stir just a little.
- 4. Add milk and butter (this cant be hot or it will kill the yeast). Stir and switch to a rubber spatula.
- 5. Add remaining flour.
- 6. Stir until you have a sticky, but knead-able, dough. The more you work the dough the less sticky it becomes.
- 7. Pour out on floured surface.
- 8. Knead for 6 - 7 minutes, only adding a little flour if it gets too sticky. If too much flour is added, an unpleasant crust forms.
- 9. Spray a bowl with butter spray. Make a nice ball and put it in the bowl. Cover.
- 10. Let it sit for 1 hour or until it doubles in size.
- 11. Now after the dough has risen, remove the cover. Pour onto a floured surface and punch down the dough.
- 12. Pat with hands shaping it into a square.
- 13. Cut into 12 squares.
- 14. Place in a greased pan they can touch (for greased pan, I use non-stick butter flavor spray in a can).
- 15. After you place them in the pan simply let them rise approximately 20 minutes.
- 16. Brush the rolls with the egg wash. Then bake in a 350 degree oven for 25 minutes.

- Combine milk, 1/2 cup sugar, butter, and salt in a medium saucepan. Heat over medium heat until butter melts.

This dough should be very soft--it will be coming away from the sides of the bowl, but it will still stick to your finger when you touch it. Don't worry, it will firm up during the rising process. Part of what makes these rolls so good is that they're so soft and light; if you add too much flour, they will be heavy and dense. Place the bowl in a warm place and cover with a clean towel; allow to rise 1 hour.
- Punch down dough. Lightly flour your work surface and turn dough out onto surface. Divide in half.
- Spray two 9 x 13-inch glass pans with cooking spray. Roll first portion of dough into a rectangle and then cut it into 12 equal-sized pieces. We like to use a pizza cutter because it cuts right through dough without sticking to the blade. This dough should be very easy to work with, almost like Play-Doh. Shape each piece into a ball and place in prepared pan. Repeat with remaining dough in the second pan. Use a kitchen scale if you want to ensure that the rolls are exactly the same.
- Cover with a clean cloth and allow to rise in a warm place for about 30 minutes. When dough has about 15-20 minutes to go, preheat oven to 375°F.
- Bake for 15-18 minutes or until golden brown.
- When done, remove from oven. Rub a stick of cold butter over the tops of the rolls. Eat one now while it's still hot--that's your reward for making the world's best dinner rolls!

- 1. Mix and knead all of the dough ingredients (mixer or bread machine) to make a smooth, soft dough
- 2. Cover the dough. Let rise for about 1 hour, or until doubled in bulk. If using bread machine, just let dough or manual cycle complete it's job.
- 3. Deflate the dough and divide into 2 balls and then divide each ball into 8 or 9 pieces. Round and shape each piece into a ball.
- 4. Place 8 or 9 finished balls of dough into each of two 8"or 9" inch round cake pans that are lightly greased. Cover and let rise for about an hour or until very puffy.
- 5. If desired, brush un-baked rolls with melted butter or egg wash (1 egg beaten with 1 Tablespoon of water) and sprinkle with herbs or small seeds.
- 6. Bake in pre-heated 375 degree F. oven for 12 to 15 minutes. until golden. DO NOT OVER-BAKE !
- 7. Remove rolls from oven and as soon as you are able to handle them, take rolls out of pans and brush with melted butter. Cool completely on a rack.

- In a large bowl, combine 2 cups flour, 1/4 cup sugar, yeast and salt.
- In a small saucepan, using a candy thermometer, heat the milk, water and butter to 120-130 degrees Fahrenheit. Add to dry ingredients. With an electric blender, beat on medium speed for 3 minutes. Add 2 eggs and beat on high speed for an additional 2 minutes. Gradually stir in remaining flour to form a soft dough (dough will be sticky).
- On a lightly floured surface, knead the dough until smooth and elastic. (Kneading is a necessary step to ensure that bread dough rises properly.) Place in a greased bowl, turning once to grease the top end of the dough. Cover with plastic wrap and let rise in a warm place until doubled in size (about 1 hour). TIP: I heat the oven at 200 degrees Fahrenheit for 1 minute, turn off oven, and place the dough inside the oven to rise. (Don't forget to turn OFF the oven.).

- Mix sugar into chicken broth and heat to between 105 and 110 degrees.
- Add yeast, stir and let set for about 5 minutes.
- Add flour and shortening mix well, and knead several times to form a ball.
- Cover bowl with wet towel and keep in a warm place (I use my oven on the very lowest setting).
- After dough rises to about double in size, punch down and knead a couple of times to reform ball, recover and let rise again.
- After second rising, punch down again and pinch off the individual rolls and roll into little balls (a little bigger than a golf ball) then place on baking sheet.
- Cover again and let rise again.
