THAI CHICKEN CURRY

Learn how to make an authentic-tasting Thai chicken curry with this easy step-by-step recipe

Provided by Good Food team

Categories     Dinner, Main course

Time 40m

Number Of Ingredients 10

2 shallots, or 1 small onion
1 stalk lemongrass
1 tbsp vegetable oil
3-4 tsp red Thai curry paste
4 boneless and skinless chicken breasts, cut into bite-size pieces
1 tbsp fish sauce
1 tsp sugar, brown is best
4 lime leaves
400ml can coconut milk
20g pack fresh coriander

Steps:

  • Peel shallots or onion and cut in half from top to root. Lay the cut sides flat on a board and thinly slice. Very finely slice the lemongrass, starting at the thinner end, stopping towards the base when it gets tough (often described as 'woody' and white in the centre).
  • Heat the oil in a wok or large saucepan for a couple of minutes until the oil separates (it looks more liquid at this point). Add the shallots or onion. Fry for 3-5 mins, until soft and translucent. Stir in the curry paste and cook for 1 min, stirring all the time.
  • Add chicken pieces and stir until they are coated. Add the lemongrass, fish sauce, sugar, lime leaves and coconut milk. Bring slowly to the boil, then reduce heat and simmer, uncovered, for 15 mins until the chicken is cooked. Stir the curry a few times while it cooks, to stop it sticking and to keep the chicken submerged.
  • While the chicken is cooking, strip the leaves from the coriander stalks, gather into a pile and chop very roughly. Taste the curry and add a little more curry paste and salt if you think it needs it. Stir half the coriander into the curry and sprinkle the rest over the top. Serve with Thai jasmine or basmati rice.

1 tablespoon minced garlic
1 ½ teaspoons minced fresh ginger root
1 tablespoon curry powder
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon cayenne pepper
1 tablespoon water
1 (15 ounce) can crushed tomatoes
1 cup plain yogurt
1 tablespoon chopped fresh cilantro

JAMAICAN STYLE CURRY CHICKEN

Jamaican Style Curry Chicken image

This is a recipe that I have put together over some various websites, verbal consultations and just experimenting on my own and with my family. Rich and hearty with a great flavor when you can't get the real thing in the islands. Try a variety of hot peppers to change the flavor - even sweet bell peppers give a different taste. Use fresh thyme to really bring out the fresh taste.

Tips for Making the Best Curry Chicken:

  • Use a flavorful curry powder. The curry powder is the key ingredient in this dish, so make sure to choose one that you like. There are many different brands and varieties of curry powder available, so experiment until you find one that you enjoy.
  • Don't be afraid to adjust the heat level. This recipe calls for a medium-hot curry powder, but you can easily adjust the heat level to your liking. If you want a milder curry, use a milder curry powder. If you want a hotter curry, add some cayenne pepper or chili powder to the dish.
  • Use fresh, ripe vegetables. The vegetables in this dish should be fresh and ripe for the best flavor. If you can, try to use organic vegetables.
  • Cook the chicken until it is tender. The chicken should be cooked until it is tender, but not overcooked. Overcooked chicken will be dry and tough.
  • Serve with rice or naan bread. Curry chicken is traditionally served with rice or naan bread. Rice is a good choice if you want a more filling meal, while naan bread is a good choice if you want a lighter meal.

Conclusion:

Curry chicken is a delicious and versatile dish that can be enjoyed by people of all ages. This recipe is easy to follow and can be tailored to your own taste preferences. Whether you like your curry mild or hot, this recipe has you covered. So next time you're looking for a flavorful and satisfying meal, give this curry chicken recipe a try.
