Yield Makes about 16 bites

Number Of Ingredients 7

2 cups fresh cranberries
1 cup good maple syrup
1 cup granulated sugar
16 water crackers (such as Carr's)
8 ounces brie cheese
1/2 cup cranberry chutney or cranberry relish
Fresh mint, for garnish

Steps:

  • Rinse the cranberries and place in a medium bowl. Heat the syrup in a small saucepan until just warm. Pour over the cranberries. (Make sure the syrup is warm, not hot, or the cranberries may pop.) Gently stir with a spoon to coat all the berries. Cool, cover, and let soak in the refrigerator overnight.
  • The next day drain the cranberries in a colander. Place the sugar in a large bowl or baking dish. Add half of the cranberries and roll them around until lightly coated in sugar; repeat with the other half. Place on a baking sheet and let dry, about 1 hour.
  • To assemble, top the crackers with one slice of Brie, a light layer of cranberry chutney, and four or five sugared cranberries. Garnish with fresh mint sprigs.

Time 55m

Yield 10 to 12 servings

Number Of Ingredients 7

1 large egg
One 8-ounce wheel Brie
One 17.25-ounce package frozen puff pastry (2 sheets), thawed
All-purpose flour, for dusting
1/3 cup whole-berry cranberry sauce
1/4 cup walnuts, finely chopped
1 tablespoon fresh thyme leaves

Steps:

  • Preheat the oven to 425 degrees F and line 2 baking sheets with parchment paper.
  • Whisk together the egg with 1 tablespoon of water in a small bowl for an egg wash. Cut the side rind off the Brie, then cut the Brie into 32 even pieces. Set aside.
  • Unfold a puff pastry sheet on a lightly floured surface. Roll out into a 13-inch square. Cut into 16 squares. Repeat with the second sheet so you have 32 squares total.
  • Top a pastry square with about 1/2 teaspoon cranberry sauce, 1/4 teaspoon walnuts, a piece of Brie and a pinch of thyme.
  • Use your finger or a pastry brush to brush the edges of the pastry square with egg wash until lightly coated and tacky. Pinch 2 opposite points together, then pinch the remaining 2 points together so that you have a little package. Repeat with the remaining pastry squares and filling.
  • Transfer the pouches to the prepared baking sheets and brush with the remaining egg wash. Bake until puffed and golden brown, 15 to 20 minutes.

Time 1h

Yield 12 servings

Number Of Ingredients 6

1 sheet frozen puff pastry, from 1, 17oz box
Nonstick cooking spray
4 oz. brie cheese
1/2 c. cranberry sauce, homemade or canned
3 tbsp. raw shelled pistachios, chopped
Flaky sea salt and ground black pepper, optional

Steps:

  • Thaw the puff pastry according to package directions.
  • Preheat the oven to 400°F. Spray a 24-well mini muffin pan with non-stick cooking spray. Place the brie in the freezer for 20 minutes or until firm to the touch.
  • On a well floured surface, roll the sheet of puff pastry into a 10x15-inch rectangle. Cut the pastry into 4 strips lengthwise. Then, cut the pastry crosswise into 6 strips, creating 24 squares. Press the pastry squares into each well of the muffin pan, letting the excess stick up over the edges.
  • Cut the firm brie into 24 (½-inch) slices. Place a piece in the center of each pastry square. Top each with about 1 teaspoon of cranberry sauce. Sprinkle with chopped pistachios.
  • Bake for 15 minutes or until the puff pastry is golden brown on the edges and the cheese is bubbly. Let cool in the pan for 5 minutes. Remove the bites from the pan and garnish with sea salt and pepper, if desired.

Time 50m

Yield 20 bites

Number Of Ingredients 3

1 1/2 cups cranberry sauce (use homemade or store-bought cranberry sauce)
1 puff pastry sheet
1 brie triangle, chilled

Steps:

  • Preheat oven to 375 degrees F.
  • Thaw puffy pastry sheet flat. Cut puff pastry sheet into approximately 3-inch squares and place them into mini muffin tins, pressing them into the shape of the muffin hole. Place a 1-inch slice of brie in the center of each puff pastry and then top it with approximately 1 tablespoon of cranberry sauce.
  • Bake 10 minutes or until puff pastry corners are toasted light brown. Let cool 5 minutes before serving.

Tips:

  • For the best results, use a ripe and flavorful Brie cheese. Brie de Meaux or Brie de Melun are great choices.
  • Use fresh cranberries for the best flavor. Frozen cranberries can be used in a pinch, but they will not be as flavorful.
  • To make the cranberry sauce, you can use a food processor or a blender. If you use a food processor, be careful not to over-process the sauce, or it will become too smooth.
  • If you don't have phyllo dough, you can use puff pastry instead. Just be sure to thaw it according to the package directions before using it.
  • To prevent the cranberry sauce from leaking out of the Brie bites, make sure to seal the edges of the phyllo dough or puff pastry well.
  • Bake the Brie bites until the phyllo dough or puff pastry is golden brown and the cheese is melted and bubbly.

Conclusion:

Cranberry Brie bites are a delicious and easy-to-make appetizer that is perfect for any occasion. They are sure to be a hit at your next party or gathering. With their sweet and tangy cranberry sauce, creamy Brie cheese, and crispy phyllo dough or puff pastry, these bites are sure to satisfy everyone's taste buds.
