1/4 cup sugar
2 teaspoons baking soda
Kosher salt and freshly ground black pepper

2 (14 3/4 ounce) cans whole kernel corn (or 1 bag frozen corn)
1 (8 ounce) package cream cheese
1 (4 ounce) can chopped green chilies
1 dash salt and pepper, to taste

Steps:

  • Let cream cheese soften to room temperature. You can also stick it in microwave for about 10 second at a time til softened. Drain corn. Do not drain green chiles. In a casserole dish mix all ingredients til combined thoroughly. Bake in a 350 degree oven for about 30 minutes til bubbly and light brown. Enjoy!

1/2 cup butter or 1/2 cup margarine
1 (15 ounce) can whole kernel corn, not drained
1 (15 ounce) can cream-style corn
1 (8 ounce) container sour cream
1 cup grated cheese, of choice (I like it with cheddar)
1 egg
1 (8 ounce) package corn muffin mix (Jiffy is the best)

Steps:

  • Melt butter or margarine in large pan.
  • Add whole kernel corn, cream style corn, sour cream, grated cheese, egg, and corn muffin mix.
  • Stir until well blended.

What matters is that it tastes good and is easy to make. It's also versatile, in that it can be served warm (as a side at Thanksgiving) or cold (at a BBQ or pot-luck).

1/2 cup butter (softened)
1 egg
8 ounces sour cream
8 1/2 ounces Jiffy corn muffin mix
15 1/4 ounces whole kernel corn, drained of liquid (1 can)
14 3/4 ounces creamed corn (1 can)
3 tablespoons sugar (or sugar substitute)

Steps:

  • Mix all the ingredients together well.
