Time 2h50m

Yield 10 servings

Number Of Ingredients 10

Nonstick cooking spray or butter, for the baking dish
4 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
1 medium head broccoli, cut into small florets
2 cups cooked white rice
One 10-ounce can condensed cream of chicken soup
1 cup sour cream
1/2 cup mayonnaise
1 tablespoon lemon juice
10 ounces Cheddar, grated (about 2 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking dish with nonstick cooking spray or butter.
  • Place the chicken in a large pot with water to cover. Add some salt, bring to a boil, then reduce the heat to a low simmer and cook the chicken until tender, about 45 minutes. Drain the chicken, cover, and refrigerate until cool, or up to 24 hours. Shred.
  • Meanwhile, bring a medium pot of generously salted water to a boil. Add the broccoli florets, and boil until crisp-tender, 2 to 3 minutes.
  • Spread the rice in an even layer in the baking dish. Make a second layer with the broccoli. In a large bowl, mix the chicken soup, the sour cream, mayonnaise, lemon juice, shredded chicken, half the Cheddar and some salt and pepper. Pour the mixture over the broccoli and top with the remaining Cheddar. Bake for 40 minutes; let stand for 5 minutes before serving.

BEST CHICKEN BROCCOLI CASSEROLE EVER

Best Chicken Broccoli Casserole Ever image

My friend Kevin made this one night for his own dinner. About 5 or 6 people then wandered into his house around dinnertime and demanded "just a taste". Kevin had to go to McDonald's because we ate all his supper! Although I am not a fan of soup food in general, this is one of the best incarnations of the genre I have ever seen! Bring on the can opener and enjoy!

Time 1h50m

Yield 6-8 serving(s)

Number Of Ingredients 13

1 can broccoli cheese soup
1 can cream of chicken soup
2 1/2 teaspoons curry powder
1 medium onion, diced
4 cloves garlic, diced
1 cup mayonnaise
1 cup sour cream
2 cups sharp cheddar cheese, shredded
Tabasco sauce
2 lbs boneless skinless chicken, cut into strips
2 lbs frozen broccoli florets, partially thawed
2 boxes flavored salad croutons
2 cups sharp cheddar cheese, shredded

Steps:

  • Preheat oven to 450 degrees F.
  • Mix SAUCE ingredients together in a large bowl.
  • In a lasagna pan, layer ingredients as follows: Chicken and broccoli, Sauce, Cheese and croutons.
  • Repeat these layers, finishing with cheese and croutons on top, until pan is filled.
  • Bake 1 1/2 hours.
  • You may have to cover the top toward the end to keep the croutons on top from getting too brown.

Tips:

  • Use fresh broccoli for the best flavor and texture. Fresh broccoli florets are tender and crisp, while frozen broccoli can be mushy.
  • Cook the broccoli until it is bright green and tender-crisp. Overcooked broccoli will be mushy and lose its flavor.
  • Use a sharp cheddar cheese for the best melting and flavor. A mild cheddar will not provide as much flavor as a sharp cheddar.
  • Use chicken breasts or thighs that are boneless and skinless. This will make it easier to prepare the chicken and prevent the casserole from becoming greasy.
  • Cook the chicken until it is cooked through. Undercooked chicken can be dangerous to eat.
  • Use a creamy soup, such as cream of celery or cream of mushroom, for the best flavor and texture. A cream soup will help to thicken the casserole and make it creamy and delicious.
  • Add some chopped almonds or walnuts for a crunchy texture. Nuts will also add flavor and protein to the casserole.
  • Serve the casserole hot out of the oven with a side of green salad or roasted vegetables.

Conclusion:

Chicken broccoli casserole is a classic comfort food dish that is easy to make and always a crowd-pleaser. With its creamy sauce, tender chicken, and crisp broccoli, this casserole is sure to be a hit at your next potluck or family dinner. So next time you're looking for a quick and easy meal that everyone will love, give chicken broccoli casserole a try. You won't be disappointed!
