¾ cup butter
¾ cup all-purpose flour
9 cups chicken stock
9 cups milk

Steps:

  • Melt the butter in a large pot over medium heat, and mix in the flour. Reduce heat to low, and cook, stirring constantly, about 2 minutes. Mix in the chicken stock and milk, and season with salt and white pepper. Bring to a boil, reduce heat to low, and simmer about 10 minutes.
  • Bring a pot of lightly salted water to a boil. Place the broccoli in the boiling water, and cook 2 minutes, or until just tender. Remove from heat, drain, and set aside.
  • Gradually mix the processed cheese and Cheddar cheese into the large pot until melted. Mix in the broccoli. Continue cooking about 5 minutes.

1 cup finely chopped yellow onion
1 large clove garlic, (finely minced)
1/4 cup + 3 tbsp all-purpose flour
3 1/4 cups low-fat milk, (then more to thin if desired)
1 (14.5 oz) can low-sodium chicken broth
1/2 cup heavy cream
3 cups (packed) finely chopped fresh broccoli florets*
10 oz (2 1/2 cups) sharp cheddar cheese (or extra sharp cheddar cheese, plus more for serving**)
1 oz (1/3 cup) finely shredded Parmesan cheese
salt and freshly ground black pepper, (to taste)

Steps:

  • Melt butter in pot over medium-high heat. Add in onions and cook, stirring frequently until nearly soft, about 4 - 5 minutes.
  • Add in garlic and flour, and cook for about 1 minute, stirring constantly.
  • While whisking, slowly pour in milk then chicken broth. Stir in broccoli.
  • Cook stirring constantly until mixture begins to thicken. Then reduce heat to low and allow to cook, stirring very frequently, until broccoli is tender, about 6 - 8 minutes.

1 medium yellow onion, diced
1 large carrot, diced
2 cloves garlic, minced
1/4 cup all-purpose flour

  • Melt the butter in a large saucepan or Dutch oven over medium-high heat. Add the onion, carrot and garlic and cook, stirring occasionally, until just tender, about 5 minutes. 3 cups chicken broth
2 packets Swanson® Flavor Boost™ Concentrated Chicken Broth

1 ½ (16 ounce) bags frozen broccoli florets
19 ounces processed cheese food (such as Velveeta®), cubed

  • Combine onion and garlic in a food processor; pulse until minced.
