1 cup whole wheat flour
1 tablespoon baking powder

1 ¾ teaspoons kosher salt
1 teaspoon baking soda
1 teaspoon ground cloves
1 teaspoon ground allspice
1 teaspoon freshly grated nutmeg
2 cups light brown sugar
1 cup granulated sugar
4 large eggs, room temperature
1 tablespoon McCormick® vanilla extract
1 cup vegetable oil
2 sticks butter, softened
16 oz cream cheese, softened
1 teaspoon vanilla extract
1 teaspoon kosher salt
1 vanilla bean, seeds scraped

Steps:

  • Preheat the oven to 350°F (180°C). Line the bottoms of 3 9-inch round cake pans with parchment paper and grease with nonstick spray.
  • Make the cake: Grate the carrots on the large holes of a box grater. You should have about 6 cups.
  • In a large bowl, combine the grated carrots and buttermilk and stir until the carrots are completely coated.
  • In a medium bowl, sift together the all-purpose and whole wheat flours, baking powder, cinnamon, ginger, salt, baking soda, cloves, allspice and nutmeg.

  • With the mixer running on medium speed, slowly drizzle in the vegetable oil, scraping down the sides of the bowl halfway through, if necessary. Continue mixing until the mixture is fully emulsified, about 2 minutes.
  • Add ⅓ of the flour mixture and mix on low speed until just combined. Add ½ of the carrot mixture and continue mixing on low speed until incorporated. Continue alternating adding the flour and carrot mixture. Remove the bowl from the mixer and use a flat rubber spatula to bring the batter together.
  • Evenly divide the batter between the prepared cake pans.
  • Bake until a toothpick inserted into the center of a cake comes out clean, about 25 minutes. Let the cakes cool for about 10 minutes, then remove from the pans and let cool completely.
  • Make the frosting: In the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl with an electric hand mixer), cream together the butter, cream cheese, vanilla extract, salt, and vanilla bean seeds until creamy, about 1 minute. Add the powdered sugar and continue mixing until silky and smooth, about 4 minutes.
  • Assemble the cake: Dab a bit of frosting on a cake board and place a cake layer on top. Scoop 1 cup of frosting onto the cake. Repeat with the remaining 2 layers. Use the remaining frosting to coat the top of the cake completely, leaving the sides naked.

3 1/2 oz flaked coconut

BUTTERMILK GLAZE
1 c sugar

1 Tbsp light corn syrup
1 tsp pure vanilla extract
CREAM CHEESE FROSTING
3/4 c butter softened
11 oz cream cheese ( 1 8 ounce & 1 3 ounce package)
3 c sifted powdered sugar
1 1/2 tsp pure vanilla extract

Steps:

  • 1. Pre-heat oven to 350 Line 3 (9-inch) round cake pans with wax paper; lightly grease and flour wax paper. Set pans aside.
  • 2. Stir together first 4 ingredients. Beat eggs and next 4 ingredients at medium speed with an electric mixer until smooth. Add flour mixture, beating at low speed until blended. Fold in carrot and next 3 ingredients. Pour batter into prepared cake pans
  • 3. Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Drizzle Buttermilk Glaze evenly over layers; cool in pans on wire racks 15 minutes. Remove from pans, and cool completely on wire racks. Spread Cream Cheese Frosting between layers and on top and sides of cake.
  • 4. Buttermilk Glaze Bring first 5 ingredients to a boil in a large Dutch oven over medium-high heat. Boil, stirring often, 4 minutes. Remove from heat, and stir in vanilla.
  • 5. Cream Cheese Frosting Beat butter and cream cheese at medium speed with an electric mixer until creamy. Add powdered sugar and vanilla; beat until smooth.

1 1/2 cups pecans
1 pound carrots, peeled, coarsely grated
1 cup buttermilk, at room temperature
2 1/2 cups all-purpose flour

1/2 teaspoon freshly grated nutmeg
2 teaspoons baking powder
1 1/2 teaspoons kosher salt
3/4 teaspoon baking soda
4 large eggs, at room temperature
1 3/4 cup packed light brown sugar
1 tablespoon pure vanilla extract
3/4 cup vegetable oil
3 sticks (1 1/2 cups) unsalted butter, at room temperature
Four 8-ounce blocks cream cheese, at room temperature
1 tablespoon pure vanilla extract

Steps:

  • For the cake: Arrange a rack in the center of the oven and preheat to 350 degrees F. Coat two 9-inch round cake pans with nonstick cooking spray. Line the bottoms with parchment paper rounds and lightly coat the paper with spray.
  • Cover the raisins with very hot water and let sit until plump, 15 to 20 minutes. Drain.
  • Toast the pecans on a rimmed baking sheet until fragrant and browned, 8 to 10 minutes. Let cool, and then chop 1 cup of the pecans; reserve for the cake batter. Pulse the remaining 1/2 cup pecans in a food processor until very finely ground; reserve for garnish.

  • Bake the cakes, rotating the pans halfway through, until a toothpick inserted into the center of each cake comes out clean, 35 to 45 minutes. Transfer the pans to a wire rack and let the cakes cool for 10 minutes. Run a knife around the sides of the cakes and invert onto the rack. Remove the parchment and let the cakes cool completely.
  • For the frosting: Beat the cream cheese and butter in a medium bowl with an electric mixer on high speed until smooth, about 1 minute. Beat in the vanilla. Reduce the speed to low and gradually mix in the confectioner' sugar. Increase the speed to high and beat until the frosting until light and fluffy, about 2 minutes.
  • To assemble the cake: When the cakes are completely cool, trim the domes of each cake round with a large serrated knife so the tops are flat. Place one cake, cut-side down, on a platter. Spread 1 1/2 cups of the frosting evenly over top. Place the remaining cake, cut-side down, on top. Spread the top with another 1 1/2 cups of the frosting. 1/2 cup evaporated milk
2/3 cup sour cream

Steps:

  • Heat butter in a pot. Add the onion and garlic. Saute 3 minutes.
  • Add the carrots and tomatoes. Saute 5 minutes.
  • Add Stock, salt and pepper, nutmeg and ginger. Bring to a boil. Reduce. Simmer 10 minutes.

3 1/2 cups granulated sugar
1 1/2 tablespoons baking soda

  • Preheat oven to 350 degrees F (If using a commercial convection oven, set it for 325 degrees on high fan).
  • FOR THE CAKE:.
  • Grease & flour four 12" round pans.
  • Whisk first six ingredients in a large bowl until combined(flour, granulated sugar, baking soda, baking powder, salt & cinnamon).
  • In a separate smaller bowl, lightly beat oil, eggs & vanilla until combined.
  • Add the wet mixture to the dry mixture until just combined.
  • Carefully stir in the carrots, coconut, walnuts, pineapple & raisins until everything is evenly dispersed.
  • Pour the batter into your greased & floured pans.
  • Bake in the oven, turning half way through, until a toothpick comes out clean. When you lightly push on the cake it should spring back if it is done. (It takes about 25-30 minutes in a convection oven, but will probably take longer in a household oven).
  • Cool the cake on cooling racks until it is room temperature. I cool mine in the fridge to speed things up -- but either way will work.
  • FOR THE CREAM CHEESE FROSTING:.
  • While the cake is baking & cooling you can make your frosting.
  • Beat cream cheese & softened butter in your mixer until it is light & fluffy.
  • With your mixer on low, slowly add the powdered sugar a little at a time so it doesn't fly out everywhere.
  • Continue beating until the frosting is smooth.
  • Add the vanilla to the frosting & continue to mix until combined.
  • This frosting should be a thick fluffy consistency so you can spread it easily but it won't run.
  • If you want a thinner frosting add less powdered sugar, if you want it thicker add more powdered sugar.
  • TO ASSEMBLE CAKE:.
  • When the cakes are cool, put a dollop of frosting on each one & spread around so there is an evenly covered layer (about 1/4" - 1/2" thick).
  • If you put too much frosting it will squish out from the weight of the stacked cakes.
  • Spread the remainder of the frosting on the sides of the cake.
  • FOR THE CARROT DECORATIONS:.
  • Take two small bowls of frosting.
  • To one add green food coloring until you get a nice "carrot stem green" color.
  • To the other bowl add red + yellow food coloring to make a nice "carrot orange" color.
  • Add extra powdered sugar to each to make the frosting very thick. Then use a pastry bag to pipe little carrots with green stems on the top of the cake.
  • You can use a zip-top bag with a tiny hole cut in the corner to pipe out the frosting carrots if you don't have a pastry bag.

1 (12 fluid ounce) can crushed pineapple, partially drained

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan with cooking spray.
  • Place shredded carrots in a microwave-safe bowl. Cover and cook in the microwave until slightly softened, about 3 minutes.
  • Combine eggs, white sugar, and 1/2 cup sucralose sweetener in a large bowl; beat with an electric mixer until thick and creamy. Add canola oil, applesauce, cinnamon, baking powder, baking soda, and salt; beat until well blended.
  • Fold carrots and pineapple into the bowl until well mixed. Add flour and xanthan gum; mix batter until no floury streaks remain. Scrape batter into the prepared pan using a rubber spatula.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 45 minutes. Transfer to a wire rack to cool completely, at least 20 minutes.

1/2 1/2 1/2 lb Golden Raisins
3/4 3/4 3/4 lb Pineapple Tidbits, canned, drained
1/2 1/2 1/2 cup walnut pieces
1 1/2 1 1/2 1/2 lbs carrots, washed
1 1 1 pond canola oil
1 1/2 1 1/2 1/2 lbs sugar
3/4 3/4 3/4 lb whole eggs (7 eggs)
4 4 4 t salt
4 4 4 t ground cinnamon
2 2 2 t baking soda
3 3 3 t baking powder
1 1 1 lb flour
3/4 3/4 3/4 t ground allspice
3/4 3/4 3/4 t ground cloves
6 6 6 cups Cream Cheese Frosting (recipe below)
1 1/4 1 1/4 1/4 lbs Powdered Sugar
10 10 10 ounces Cream Cheese, room temperature
5 5 5 ounces unsalted Butter, room temperature
1 1 1 t vanilla extract
Pinch Pinch Kosher Salt

Steps:

  • Preheat oven to 400 degrees. Cover raisins with very hot water and soak for 30 minutes, drain completely and set aside. Squeeze all the moisture from the pineapple tidbits. In a food processor, chop the pineapple, walnuts, and carrots into 1/8" pieces and set aside. Weigh out and measure all other ingredients and have ready. Using a stand mixer, with a paddle attachment, alternately add oil and sugar together. Mix at low speed until sugar is dissolved. Add the eggs in three separate batches until completely incorporated. With the mixer still running, add all of the dry ingredients and mix, scraping the bowl down frequently. Fold in the pineapple, carrots, raisins, and walnuts. Spray 2 half sheet pans with non-stick spray, line with parchment paper, and spray again. Pour half of the batter into each pan. Bake in the oven for 25 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and cool to room temperature. Trim the edges of the cake and cut each in half to achieve 4 equal pieces. Spread 1 1/2 cups of frosting on the first layer of the cake and top with another layer. Repeat this step for the third and fourth layers using 1 1/2 cups of frosting between each layer.

1 1/2 c vegetable oil
2 c sugar
2 c plain flour
1 tsp baking powder
1 tsp baking soda

1 8 oz. cream cheese, softened
1 stick butter or margarine, softened
1 16 oz. 4 x powdered sugar

  • 1. Blend together eggs and oil. Sift sugar and other dry ingredients together. Add to egg mixture, mixing well. Add carrots and pecans. Blend well. Pour mixture into 2 (9") cake pans which have been greased and floured. Bake at 375 degrees for 30 to 40 minutes. If a 12"x8"x2" pan is used, bake at 350 degrees for 45 minutes. Cream together cream cheese and butter. Add sugar, vanilla and mixing well. Frost between layers, top and sides.

1 cup brown sugar
1 cup raisins
4 eggs
1 1/2 cups white sugar

Steps:

  • In a medium bowl, combine grated carrots and brown sugar. Set aside for 60 minutes, then stir in raisins.
  • Preheat oven to 350º F. Grease and flour two 10 inch cake pans.
  • In a bowl, combine the flour, baking soda, salt and cinnamon.
  • In a large bowl, beat eggs until light. Gradually beat in the white sugar, oil and vanilla. Stir in the pineapple.
  • Stir the flour combination above into the wet mixture only until absorbed.
  • Finally stir in the carrot mixture and the walnuts. Pour evenly into the prepared pans.

2 medium (2/3 cup) over-ripe bananas, mashed
1/3 cup carrot, finely grated
1/4 cup walnuts, finely chopped

Steps:

  • 1. Preheat oven to 400ºF/200ºC. Lightly grease a flat baking tray. 2. Sift flours and cardamom in a large bowl. 3. Using your fingertips, rub butter into flour until mixture resembles breadcrumbs. 4. Add sugar, banana, carrot, nuts and currants. Add in milk. Carrot cake is a family favorite. However, each recipe I ever used lacked "something". So after researching and trying so many, I finally decided to come up with what I thought would be good. My family and friends all said it was the best they ever tasted! So this is my recipe, developed May 2013, by me!

2 1/2 c flour
2 c sugar
2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground ginger
1/8 tsp ground cloves
4 large eggs, slightly beaten
1 1/3 c oil
4 c shredded carrots, lightly packed
3/4 c crushed pineapple, well drained
3/4 c chopped pecans
1 c flaked coconut
FROSTING:
16 oz cream cheese, softened
2 stick butter, not margarine
2 lb powdered suger
1 Tbsp powdered vanilla, if available (this will not thin your frosting)
TOPPING:
1 c finely chopped pecans
1 c coconut, toasted or not.

Steps:

  • 1. Mix all dry ingredients together.
  • 2. Add in beaten eggs & oil. Mix until well blended. Add carrots, pineapple, pecans & coconut. Mix well, but never fast.
  • 3. Pour into 2 10" prepared cake pans. Bake at 350, for 20 mins. Then finish baking at 325, about 30 more mins. or more, until done. Test for doneness.
  • 4. Cool on racks, then remove from pans while slightly warm. Finish cooling, or pop into freezer until cold and ready to frost.
  • 5. For frosting: Put cream cheese & butter into mixer, mix until well blended. Add powdered sugar a scoop at a time, on low speed. Then add vanilla. Raise speed, until well blended. Frost cakes when cakes are very cool/cold.
  • 6. For topping: Mix coconut and pecans together. Cover sides with mixture, and top, if not decorating.
  • 7. Refrigerate until 20 minutes before serving. Refrigerate any remaining cake. This makes a very large cake and recipe can be cut in half. ENJOY!
