Ok...after searching high and low, I've finally found a recipe that's similar to a casserole dish from one of my fav. eateries in St. Augustine, FL! It's a little diff., but just as tasty. I think their dish had a lot more butter in it. I pass this on with love and the hopes that you will take it to all of your potluck get togethers. I hope you like it, wait...no I hope you LOVE IT!:)

36 ritz whole wheat crackers (1 sleeve, crushed)
16 ounces broccoli (cooked)
1 egg
1 cup shredded cheese (any kind you like, I prefer sharp)
1 cup mayonnaise (hellman's canola is my fav.)
2 tablespoons onions, chopped
2 tablespoons sour cream
salt and pepper (To Taste)
1 tablespoon canola oil or 1 tablespoon olive oil

Steps:

  • Preheat oven to 350.
  • spray a casserole dish with non-stick spray.
  • combine cooked broccoli, egg, onion, cheese, mayo,sour cream, ***and salt and pepper to taste. (I add the egg last so that I can see if it needs seasoning).
  • Make sure the mixture is a little "wet", but not soupy.
  • Pour into casserole dish.
  • Top with ritz and pour a little oil (1 tbs or less) on top of crackers.
  • Bake at 350 for 30 minutes until top is golden brown and mixture is bubbling.

Kevin had to go to McDonald's because we ate all his supper! Although I am not a fan of soup food in general, this is one of the best incarnations of the genre I have ever seen! 1 can broccoli cheese soup
1 can cream of chicken soup
2 1/2 teaspoons curry powder
1 medium onion, diced
4 cloves garlic, diced
1 cup mayonnaise
1 cup sour cream
2 cups sharp cheddar cheese, shredded
Tabasco sauce
2 lbs boneless skinless chicken, cut into strips
2 lbs frozen broccoli florets, partially thawed
2 boxes flavored salad croutons
2 cups sharp cheddar cheese, shredded

Steps:

  • Preheat oven to 450 degrees F.
  • Mix SAUCE ingredients together in a large bowl.
  • In a lasagna pan, layer ingredients as follows: Chicken and broccoli, Sauce, Cheese and croutons.
  • Repeat these layers, finishing with cheese and croutons on top, until pan is filled.
  • Bake 1 1/2 hours.
  • You may have to cover the top toward the end to keep the croutons on top from getting too brown.

My sister got this recipe from one of her in-laws after falling in love with it a few years ago and it's been our family favorite ever since! It's so good with practically any meal, whether a mundane weeknight dinner or a more elaborate thanksgiving feast. Also, although it truly does taste the best with the cream of mushroom soup it can be made with any cream soup (I usually use broccoli cheese or 1 cream of chicken and 1 cream of celery because of picky hubby!). Oh, and I like to add a sprinkle of onion powder to the mix too! Edited to Add: I've been mixing 1/2 cup breadcrumbs and 1/2 cup parmesan cheese for the topping instead of just breadcrumbs. It's really good that way too!

3 -4 stalks fresh broccoli, chopped
2 (10 3/4 ounce) cans mushroom soup
1 dash salt and pepper (to taste)
2 cups cheddar cheese, shredded (I prefer aged cheese for the stronger flavor)
1 cup breadcrumbs
1/4 cup margarine (or butter)

Steps:

  • Steam broccoli until tender and place in casserole dish (about 9" x 13").
  • In mixing bowl stir together mushroom soup, salt and pepper and cheese, spread over broccoli.
  • In separate mixing bowl cut margarine into bread crumbs and then sprinkle over the mushroom soup and cheese mixture.

2 10 oz. packages frozen broccoli
1 (15.25 ounce) can whole kernel corn, drained
1 small onion diced
1 16 oz. container sour cream
1 (10.75 ounce) can condensed cream of broccoli soup undiluted
2 c shredded cheddar cheese
1 (6 ounce) package herb-seasoned dry bread stuffing mix
1/4 c butter, melted

Steps:

  • 1. Preheat oven to 350 degrees F. Pre-cook the broccoli about half way through. DO NOT over cook the broccoli because it will be mushy later.
  • 2. In a large bowl, mix together broccoli, corn, and onions. Stir in sour cream, soup, and shredded cheese. In a separate bowl, toss together stuffing mix and melted butter. Spread broccoli mixture into a 2-3 quart casserole dish and cover with stuffing mix.
  • 3. Bake in preheated oven for 30 minutes, or until heated through and browned on top. Sprinkle remaining 1 3/4 cups cheese on top and bake an additional 5 minutes, until cheese is melted and bubbly.
