BEST "NO ROLL" BAKING POWDER BISCUITS

Best

I love home made biscuits but hate the mess of rolling them out on my counter. With this recipe you can simple form the dough into balls with your hand and then press them onto a baking sheet... no rolling or cutting required! This is a Better Homes and Gardens recipe.

Time 27m

Yield 12 biscuits, 6 serving(s)

Number Of Ingredients 5

4 cups all-purpose flour
2 tablespoons baking powder
1 teaspoon salt
2/3 cup shortening
1 1/2 cups milk

Steps:

  • Preheat oven to 450.
  • Mix dry ingredients together thoroughly.
  • Add shortening and cut into dry mix until it resembles course crumbs. (Two butter knifes work, but everyone should own a pastry cutter!).
  • Add milk and stir until dough just clings together.
  • Form dough into balls a little larger then a golf ball and place side by side on a baking sheet.
  • Press balls down with the palm of your hand until they are about 1/2 inch thick.
  • Bake in oven for 10 - 12 minutes or until golden.

Tips:

  • Use cold butter: Cold butter creates steam pockets in the biscuits as they bake, resulting in flaky layers. Cut the butter into small pieces and chill it for at least 30 minutes before using.
  • Don't overwork the dough: Overworking the dough will result in tough biscuits. Mix the ingredients together just until the dough comes together.
  • Use baking powder: Baking powder is the leavening agent that helps the biscuits rise. Make sure to use fresh baking powder, as old baking powder will not work as well.
  • Roll the dough to the correct thickness: The dough should be rolled to a thickness of about 1/2 inch. If the dough is too thick, the biscuits will be dense; if it is too thin, they will be dry.
  • Cut the biscuits with a sharp cutter: A sharp cutter will help to create clean edges on the biscuits, which will help them rise evenly.
  • Bake the biscuits in a hot oven: The biscuits should be baked in a preheated oven at 450°F. This will help them to rise quickly and evenly.
  • Brush the biscuits with melted butter: Brushing the biscuits with melted butter before baking will help to create a golden brown crust.

Conclusion:

Baking powder biscuits are a classic Southern comfort food that are easy to make and delicious. By following these tips, you can make perfect biscuits every time. Whether you're serving them with fried chicken, gravy, or just a pat of butter, these biscuits are sure to be a hit!
