1 cup chopped peeled fresh or frozen peaches
1/2 cup orange juice
2 tablespoons brown sugar
1/4 teaspoon ground cinnamon
1 cup fresh or frozen blueberries
1/2 cup sliced fresh or frozen strawberries
BATTER:
1-1/4 cups all-purpose flour
1/2 cup whole wheat flour
2 tablespoons flaxseed
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1 cup buttermilk
3/4 cup orange juice
1 tablespoon canola oil
1 teaspoon vanilla extract

Steps:

  • In a small saucepan, combine the peaches, orange juice, brown sugar and cinnamon; bring to a boil over medium heat. Add berries; cook and stir for 8-10 minutes or until thickened. , In a large bowl, combine the flours, flax, baking powder, baking soda and cinnamon. Combine the buttermilk, orange juice, oil and vanilla; stir into dry ingredients just until moistened. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve with compote.

1 cup whipping cream
1/4 cup powdered sugar
2 cups sliced fresh strawberries or 1 package (10 oz) sliced frozen strawberries, thawed, drained
1/2 cup fresh or frozen (thawed and drained) blueberries
2 eggs
1 cup milk
2 1/3 cups Original Bisquick™ mix
2 tablespoons granulated sugar
1/4 cup vegetable oil
Additional berries, if desired

Steps:

  • In chilled medium bowl, beat whipping cream and powdered sugar with electric mixer on high speed until stiff peaks form. Fold in strawberries and blueberries.
  • Heat Belgian or regular waffle iron (Waffle irons without a nonstick coating may need to be brushed with vegetable oil or sprayed with cooking spray before batter for each waffle is added.)
  • In small bowl, beat eggs with electric mixer on high speed about 3 minutes or until thick and lemon colored. Beat in milk. Beat in Bisquick and granulated sugar on low speed until smooth. Gently fold in oil. Pour batter onto hot waffle iron. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle iron.
  • Bake about 5 minutes or until steaming stops. Carefully remove waffle. Top each waffle with berry cream and additional berries.

3 tablespoons unssalted butter
1 cup flour
1 teaspoon baking powder
Pinch of baking soda
Pinch cinnamon
Pinch of salt
1/4 sugar
1/2 cup yogurt
1/2 cup milk
1 egg, lightly beaten
1 cup frozen blueberries not thawed

Steps:

  • Preheat waffle iron and read manufacturer's instructions. Melt butter in microwave. In a large bowl, combine flour, baking powder, baking soda, cinnamon, salt and sugar. In another bowl, beat together yogurt, milk and egg. Whisk liquid mixture into dry ingredients until just combined. Fold in frozen berries. Stir in melted butter. Brush hot waffle iron with butter or spray. Spoon about 1/2 cup of batter onto iron, smooth out with back of spoon and close to cook. This first waffle will be the tester. Cook waffle until golden brown. Remove to plate and keep warm. Serve with butter, maple syrup or blueberry syrup.

1 cup cake flour
1/2 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon nutmeg, freshly grated
1 cup buttermilk
2 lemons, juice and zest of
3 large eggs, separated
1/2 teaspoon cream of tartar
1/4 cup water
1/2 cup light corn syrup
1 cup sugar
1 lb berries (fresh or frozen-raspberry is my favorite)

Steps:

  • Combine flour, salt, baking powder, and nutmeg in a bowl; make well in center; set aside.
  • In another bowl, combine buttermilk, lemon zest and juice, blend well.
  • Add egg yolks to buttermilk mixture and mix until well incorporated.
  • In a clean bowl (free of any grease) beat egg whites at low speed until they begin to froth.
  • Add cream of tartar and beat at high speed until glossy, stiff peaks form; set aside.
  • Add buttermilk mixture to well in flour mixture and whisk until no large lumps remain.
  • Gently fold 1/2 of egg whites into batter, then fold in remaining egg whites (batter will be streaked with egg whites).
  • Bake waffles on preheated waffles iron to a rich golden brown.
  • Serve immediately topped with warm berry syrup.

  • Bring water and corn syrup to a boil in a saucepan over medium heat.
  • Add sugar and stir to dissolve.

1 1/2 c all purpose flour
1 Tbsp brown sugar
1 tsp baking powder
1/2 tsp sea salt
1 egg
1 Tbsp cooking oil
1 1/2 c milk, 2%
blueberries, frozen
red and/or golden raspberries, frozen
blackberries, frozen
chopped strawberries, frozen
seedless cherries, chopped and frozen

Steps:

  • 1. Butter/oil a waffle maker and turn it on.
  • 2. Mix the flour, sugar, baking powder and salt in one bowl and the egg, cooking oil and milk in another.
  • 3. Mix the Berries in a different bowl, then go back to the dry and wet ingredients. Pour the wet ingredients into the dry and whisk/stir until smooth.
  • 4. Pour the berries into the batter and stir until fully mixed.
  • 5. Pour some of the batter onto the waffle maker (don't press hard, press lightly, or not at all so the berries don't get crushed!), and wait for it to be done. Put any topping you like onto your waffle.
