BERRY MALLOW YAM BAKE

My Yam Bake has become a holiday tradition in our family. The blend of cranberries and sweet potatoes in this recipe results in a very pretty appearance-and a unique taste. I grew up on a small Arkansas farm in the foothills of the Ozarks. Both my mother and father are excellent cooks, and I've been cooking since I was a little girl. In fact, my husband teases me that I read cookbooks like some other people read novels!

Time 50m

Number Of Ingredients 8

1/2 c flour*
1/2 c brown sugar
1/2 c oats*
1 tsp cinnamon
5 Tbsp butter
2-17 oz. can(s) yams, drained
2 c cranberries
1 1/2 c mini marshmallows

Steps:

  • 1. In a medium mixing bowl, combine flour, brown sugar, oats, and cinnamon. Cut in butter with a fork or pastry blender, until coarse crumbs form.
  • 2. In a large mixing bowl, gently stir together the yams and cranberries.
  • 3. Lightly toss 1 cup of the crumb mixture with the yams-cranberries. Spread evenly in a 1 1/2 to 2 qt. baking dish, that has been prepared with food release spray.
  • 4. Cover with remaining crumb mixture.
  • 5. Bake at 350* for 35 minutes. Remove from oven, sprinkle with marshmallows, and return to oven until marshmallows are lightly browned.
  • 6. NOTES: I like to spread the love, so I cut the cranberries in half before mixing them with the yams. This takes a few extra minutes, but it's well worth it. If fresh cranberries are too tangy for you, you can easily substitute a can of whole berry cranberry sauce. Just scramble it up in the can a bit, then dollop around on top the yams, before adding the crumb topping. I have also made this recipe with fresh yams or sweet potatoes, peeled and sliced, about 3-4 cups. It will need more baking time if you use fresh; plan 50-60 minutes. If you're in a hurry, you can put the pan under the broiler to toast the marshmallows. Reheats very well. My family even eats it for breakfast! *This recipe is easily made gluten free, by using GF oats and GF all purpose flour.

Tips:

  • Choose the right yams: Select firm, unblemished yams that are about the same size so they cook evenly.
  • Prick the yams: Before baking, prick the yams all over with a fork to help them cook faster and more evenly.
  • Use a baking dish with sides: This will prevent the juices from the yams and berries from spilling over in the oven.
  • Cover the baking dish: Covering the dish will help the yams cook more quickly and evenly.
  • Add a little bit of water: Adding a small amount of water to the baking dish will help prevent the yams from drying out.
  • Roast the yams until they are tender: The yams should be fork-tender when they are done cooking.
  • Serve the yams immediately: Once the yams are cooked, serve them immediately with your favorite toppings, such as butter, marshmallows, or fruit.

Conclusion:

Berry Mallow Yam Bake is a delicious and easy-to-make dish that is perfect for a weeknight meal or a special occasion. The combination of sweet yams, tart berries, and gooey marshmallows is sure to please everyone at your table. With a few simple tips, you can make this dish perfectly every time.
