Time 25m

Number Of Ingredients 7

35 vanilla wafer cookies (1 1/2 cups), (plus more for the top)
5 tablespoons Challenge Unsalted Butter (melted)
8 ounces Challenge Cream Cheese (softened)
1 cup powdered sugar
1 teaspoon vanilla extract
2 8 ounce containers whipped topping (thawed)
1-2 pounds fresh berries ((strawberries & blueberries or your favorite))

Steps:

  • Place cookies in a large resealable gallon size bag. Seal all but 1" of the bag (so air can escape) and crush with a rolling pin.
  • Stir cookie crumbs and melted butter with a fork. Press into an 8-inch or 9-inch square pan.
  • Add cream cheese, powdered sugar, and vanilla to a large mixing bowl. Mix with a hand mixer until smooth, then mix in one container (8-ounces) of whipped topping. Reserve other container for topping.
  • Slice berries as desired.
  • Assemble the dessert: spread half the cheesecake mixture on top the crust. Spread half the berries on top. Cover with the remaining cheesecake mixture and top with remaining berries.
  • Top the dessert with about half the remaining whipped topping. Crush more cookies and sprinkle on top, if desired. Chill for about an hour before serving.
  • Store in refrigerator for 1-2 days.

Time 3h

Yield 16 servings

Number Of Ingredients 11

Nonstick cooking spray, for the baking dish
5 tablespoons unsalted butter, melted
1 tablespoon granulated sugar
Two 5.3-ounce boxes shortbread cookies, placed in a resealable plastic bag and crushed with a rolling pin
One 8-ounce package cream cheese, at room temperature
5 tablespoons confectioners' sugar
1/2 teaspoon vanilla extract
Pinch kosher salt
One 12-ounce container frozen whipped topping, such as Cool Whip, thawed
4 cups diced strawberries (from about 2 pints)
One 3.4-ounce package instant vanilla pudding (plus required ingredients)

Steps:

  • Spray an 8-inch square baking dish lightly with nonstick cooking spray. Combine the butter, granulated sugar and 1 1/2 cups of the crushed cookies in a medium bowl. Press the mixture into the prepared baking dish and freeze to set, about 15 minutes.
  • Combine the cream cheese, confectioners' sugar, vanilla and salt in a large bowl. Beat with an electric mixer on medium-high speed until fluffy, about 3 minutes. Fold in 3/4 cup of the whipped topping to lighten. Pour the filling over the crust and smooth with an offset spatula, then top with 2 cups of the diced strawberries. Refrigerate for 15 minutes to set.
  • Meanwhile, make the instant pudding according to the package directions. Pour over the filling. Top with the remaining whipped topping, cover and refrigerate at least 2 hours to set.
  • Before serving, sprinkle the remaining cookie crumbs and diced strawberries over the top.

Tips:

  • Use fresh, ripe berries for the best flavor. Frozen berries can also be used, but they should be thawed and drained before using.
  • If you don't have a 9x13 inch baking dish, you can use a smaller dish and adjust the cooking time accordingly. Just make sure the dish is large enough to hold all of the ingredients.
  • The Berry Lush can be served immediately, or it can be chilled for a few hours or overnight. This will allow the flavors to meld and the dessert to set.
  • Garnish the Berry Lush with fresh berries, whipped cream, or a dollop of ice cream before serving.

Conclusion:

The Berry Lush is a delicious and easy-to-make dessert that is perfect for any occasion. It's a great way to use up fresh berries, and it's always a hit with family and friends. So next time you're looking for a quick and easy dessert, give the Berry Lush a try. You won't be disappointed!
