Susie's No-Marshmallow! Berry Pretty Fruit Dip image

Butter, cream cheese, confectioners' sugar, Cool Whip and pureed strawberries - that's it. Of all the from-scratch, healthy, gourmet appetizers I made for the family holiday, this is the one they finished and wanted the recipe for. Go figure. It is fluffy and gooey good. Prep time doesn't include the fruit.

Yield 1 bowl of fruit dip

Number Of Ingredients 5

2 tablespoons butter
3 ounces softened cream cheese
2 cups confectioners' sugar
12 ounces Cool Whip
1 cup pureed strawberry (fresh or frozen)

Steps:

  • Cream butter and softened cream cheese.
  • Add 2 cups confectioners' sugar and blend thoroughly.
  • Fold in Cool Whip and pureed strawberries.
  • If using frozen strawberries (I never have) you may want to drain a bit of juice off and add it to the dip separately, a bit at a time so the dip doesn't get too thin.
  • Serve in a pretty bowl with a platter of your favorites: grapes, strawberries, kiwi, Satsuma oranges, Fuji apples (soaked in orange juice), fresh pineapple- you get the idea.

1 loaf sourdough bread rounds
2 lbs brie cheese, trimmed and cubed
1/4 cup brown sugar
1/2 cup chopped pecans, toasted
1/2 cup pine nuts, toasted
1/2 cup blueberries
1/2 cup raspberries

Steps:

  • Slice the top off a round loaf of sourdough bread.
  • Save the top, but hollow out the inside of the loaf.
  • Discard insides or use for breadcrumbs later.
  • Combine brie, sugar, nuts and berries.
  • Place into the hollowed-out loaf and cover with bread top for a lid.
  • Wrap in foil and bake for 40 minutes at 350 degrees.
  • Serve warm with a tray of sliced baguettes.
  • Bread lid can be cut into pieces and also used for dipping.

I have made this for many years. At Christmas time I replace the blueberries/raspberries with cranberries for a festive look.

1 large sourdough loaf
2 lb brie cheese, trimmed & cubed
1/4 c brown sugar
1/2 c pecans, chopped & toasted
1/2 c pine nuts, toasted
1/2 c blueberries
1/2 c raspberries

Steps:

  • 1. Preheat oven to 350 F. Slice the top off the bread. Save the top and hollow out the inside of the loaf by taking out large chunks of bread. Save bread chunks to serve later.
  • 2. Combine brie, nuts, brown sugar and berries. Place inside the hollowed out loaf and cover with the bread top. Wrap the whole thing in foil and bake for 40 minutes.
  • 3. Serve with baguette slices, reserved chunks of bread, crackers or veggies.
