This recipe came from my Grandmother Johansen, she was a wonderful old-school cook. I learned basically to cook from her on my summer vacations there as a little girl. I still remember how she prepared this summer dish with such care and pride. 'Velbekomme' as we say in Denmark.

Number Of Ingredients 8

1 kg mixed berry (e.g. black currants, red currants, raspberries, cherries and rhubarb)
1 liter water
150 -175 g sugar
1/2 vanilla bean
4 tablespoons cornstarch, per liter of stained juice
50 g chopped blanced almonds
whipping cream
3 -5 fresh raspberries, to sprinkle on top of the dessert

Steps:

  • Rinse berries.
  • Place them in a saucepan with the water and simmer for five minutes.
  • Pour berries into a sieve to drip into a bowl, pressing for juice.
  • Measure juice and pour back into saucepan, add vanilla and sugar to taste.
  • Bring juice to a slow boil.
  • Let boil one minute.
  • Pour into a serving dish, sprinkle with a bit of sugar and let cool.
  • Serve with chopped almonds, whipping cream and whole berries as decoration.

1 1/2 cups strawberries (frozen, but thawed, chopped and kept cold)
2 tablespoons raspberry preserves
2 tablespoons honey
6 ounces whipping cream
3 ounces Baileys Irish Cream
1 ounce brandy
3 tablespoons pecans (finely chopped and divided per prep)

Steps:

  • In a blender, combine 1st 6 ingredients and blend until berries are fully pureed and mixture is creamy.
  • Gently fold in 2 tbsp of chopped pecans and divide mixture among 8 small serving glasses approximately 4 ounces in size.
  • Top each serving with a few pieces of the remaining 1 tbsp of chopped pecans and chill for at least 1 hour or until ready to serve.
  • NOTES: The yield is 8 3-oz servings as a palate cleanser after a savory course of an elegant meal. As a light dessert, I suggest 6 4-0z servings w/a sml berry, scattered choc shavings, a mint or a cookie to dress it up.

I came across this recipe recently in an old magazine. It's perfect for summer! Low fat and sugar free products can be used if desired. Chill times are not included in prep or cook times.

1 (3 ounce) package strawberry gelatin
1 (3 ounce) package raspberry gelatin powder
2 cups boiling water
2 cups cold water
1 (8 ounce) carton strawberry yogurt
1 (8 ounce) carton raspberry yogurt
2 cups sliced fresh strawberries
1 (12 ounce) carton Cool Whip

Steps:

  • In a large bowl, dissolve strawberry and raspberry gelatin in boiling water. Stir in cold water and both yogurts. Stir until well blended. Chill until mixture is syrupy, about 1 hour.
  • Fold in strawberries and whipped topping. Spoon into individual dishes. Chill until firm, about 4 hours.
  • Garnish with fresh berries if desired.

Tips:

  • For the creamiest dessert, use cold heavy cream and cream cheese.
