Tips:

  • Freshly milled cornmeal is best for these muffins, as it gives them a more pronounced corn flavor. If you don't have freshly milled cornmeal, you can use store-bought cornmeal, but be sure to choose a brand that is stone-ground.
  • Buttermilk adds a tangy flavor to these muffins and helps keep them moist. If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or white vinegar to 1 cup of regular milk.
  • Don't overmix the batter. Overmixing can make the muffins tough. Stir the batter just until the ingredients are combined.
  • Bake the muffins until a toothpick inserted into the center comes out clean. Overbaking will make the muffins dry.
  • Let the muffins cool slightly before serving. This will allow them to set and develop their full flavor.

Conclusion:

These berry cornmeal muffins are a delicious and easy-to-make breakfast or snack. They're perfect for using up fresh berries, and the cornmeal gives them a unique flavor and texture. With their moist and tender crumb and sweet and tangy flavor, these muffins are sure to be a hit with everyone who tries them.
