1 1/3 cups water
2 tablespoons olive oil
4 cups flour
1 teaspoon salt
2 teaspoons active dry yeast

Steps:

  • Add the ingredients to the bread machine in the order given by the manufacturer (liquids first, followed by drys, and finally yeast).
  • Process on the "dough" cycle for 1 1/2 hours then turn out onto a floured surface.
  • Divide into (2) equal sized dough balls. Knead each ball in your hands for a few minutes, then set under a towel for 15-20 minutes to rest.
  • Stretch or roll each dough ball seperately into a 14-inch circle, and prebake on a lightly oiled pizza pan, or cornmeal dusted pizza stone for approximately 5 minutes in a 375 degree oven.

This one is customized for the Panasonic/National. I also didn't divide the dough into 2 pieces -- I simply use the entire dough to make a thick-crusted pizza that fits the dimension of my pizza stone.

1 teaspoon sugar
2 teaspoons salt
1/4 cup cornmeal (plus another tablespoon for dusting pizza paddle or cookie sheet)
3 tablespoons whole wheat flour
3 cups unbleached white flour (made from hard wheat)
1 1/4 cups water (plus an additional 1 or 2 tablespoons if the mixture looks dry and crumbly after the first 10 minute)
2 tablespoons olive oil
1 tablespoon yeast

Steps:

  • Place all ingredients in the bread machine in the order recommended by the manufacturer.
  • Program the machine for the dough setting and press start.

This makes an awesome vegan pizza! The kids love it. I found this dough recipe online (Mitch Mandell with fabulousfoods.com) and it is so delicious and easy to prepare. We experimented with different cheese alternatives and the rice cheese has the best flavor and best melting properties. Prep time is minimal (includes placing items in bread machine and later assembling the pizzas). Prep time listed includes the bread machine time. Place the ingredients in the bread machine, go away for an hour and a half, and come back and make homemade pizza. What a treat! I altered the recipe to use less yeast (1 packet or approx 2 1/2 tsp rather than the suggested 2 Tablespoons in the original recipe). Be sure to use the dough right after it comes out of the machine for the best elasticity! Cooking time is approximate. Everyone can enjoy this, even folks who aren't on a dairy free diet. The taste is great!

1 cup warm water (between 95 and 115 degrees)
2 tablespoons honey
1/4 cup olive oil
3 1/2 cups flour
1/2 teaspoon salt (I use sea salt)
2 1/2 teaspoons yeast (or 1 packet)
cornmeal (enough to sprinkle on the cooking tray) (optional)
your favorite pizza sauce
olive oil (small amount to drizzle)
8 ounces alternative cheese

Steps:

  • Place liquid ingredients into the bread machine.
  • Place flour and salt in the bread machine.
  • Make a well in the top of the flour and pour in the yeast.
  • Close the machine and set it to the dough setting (follow your machine's instructions).
  • When the machine beeps and the dough is ready, sprinkle some flour on a working surface and form the dough into 2 balls (or one for a REALLY thick pizza).
  • Flatten it while pressing from the center outwards. Stretch the dough while turning it. Once it's the right size for your preference, you are ready to put it on a pan.
  • Grease a cookie sheet or pizza pan and, if desired, for a pizza shop flare, you can sprinkle a light dusting of cornmeal on the surface before placing the dough down (be sure none of the cornmeal is left exposed, or it will smoke when you put it in the oven!).
  • I like to stretch my dough to the edge of a cookie sheet pan and then pinch the edges up.
  • Prick the dough with a fork all over (to keep it from bubbling up and to allow it to hold the sauce well).
  • Drizzle small amount of olive oil (nice flavor) over the dough. I spread mine around with clean fingers.
  • Add toppings - pizza sauce and then whatever you want. We like mushrooms, diced red pepper, and diced onion. Be creative!
  • Top with the cheese substitute (we used to use Rice cheese until we learned that it contained milk proteins. Read labels carefully and select a smooth melt mozzarella alternative).
  • Cook in a preheated 400 degree oven until the crust and cheese lightly browns.
  • Serve and enjoy!
