Tandoori Masala, a delectable dish from the heart of Bengal, India, is a symphony of flavors that will tantalize your taste buds. It features succulent chicken marinated in a flavorful blend of yogurt, aromatic spices, and fresh herbs, then grilled to perfection in a traditional tandoor oven. This dish is a true culinary delight, offering a perfect balance of tangy, spicy, and smoky notes.
Accompanying the Tandoori Masala are three equally enticing recipes that elevate the dining experience. The tangy Tomato Chutney, with its vibrant red hue and burst of flavors, provides a refreshing contrast to the richness of the chicken. The creamy Cucumber Raita, with its cooling yogurt base and refreshing cucumber, adds a soothing touch to the meal. And the aromatic Jeera Rice, infused with the earthy flavor of cumin seeds, serves as a perfect accompaniment, soaking up the delicious juices from the chicken and sauces.
BENGAL TIGER PIZZA
Steps:
- For the dough: Mix the flour, yeast, salt and 2 cups of body temperature water until well combined, 3 to 4 minutes. Add the Olive Oil and roll it into the dough. Place the dough in a pot, cover loosely with plastic and refrigerate for 8 hours. Remove the dough from the pot and roll into 18-ounce balls, place on a tray and let rise 6 to 8 more hours.
- For the green sauce: Blend the basil, cilantro, garlic, salt and pepper in a blender, slowly adding enough Olive Oil so the consistency becomes slightly thinner than peanut butter.
- For the pizza: Preheat the oven to 550 degrees F. Roll and toss 1 ball of dough until it's 18-to-20 inches around. Reserve the remaining dough for another use or for other pizzas. Place the round on a pizza pan and cover with the green sauce; keep any leftovers in the refrigerator for up to 3 days. Top with a blend of mozzarella and provolone pizza cheese. Add the tandoori chicken, real crabmeat and hearts of palm. Bake until the crust is golden brown, about 15 minutes. Remove from oven and top with the fresh cilantro.

TANDOORI MASALA DRY RUB
Entered for safekeeping from Riascollection.blogspot.com. Fenugreek leaves have a bitter taste like a cross between fennel and mint or lemon. Indian red chilli powder is more similar to ground cayenne pepper than U.S. chili powder. If using a coffee grinder, use one dedicated to spices rather than coffee. Leftovers should be stored tightly sealed in the freezer for up to 6 months, or on the shelf for 4-6 weeks.

BENGAL TIGER CHICKEN
Chicken in a creamy, mild curry sauce. From my Grandma's recipe box, I grew up with this and had no idea it was so easy until my late 20's. I get many compliments on it, notably from those who claim they do not like "indian" food.

Steps:
- Preheat oven to 350*F.
- Combine condensed soup, mayonnaise, curry, lemon juice, and half of the grated parmesan cheese together.
- Pour over chicken in a shallow baking dish.
- Mix remaining parmesan cheese with the dressing and spread evenly over top of casserole. Note: It is meant to be a kind of light, crunchy topping, not a soft one.
- Bake for one hour or until chicken is cooked through.
- I always end up doubling this recipe for my family *except* for one thing: the mayo. I do not double the mayo, I use 1 and 1/2 c in my double recipe.
- The sauce is marvelous over jasmine rice. This is one of my favorite leftover dishes, it is almost better the next day! Enjoy!

TANDOORI MASALA PASTE - 2 OZ. OR 50 G
Entered for safekeeping from curryfocus.co.uk. This is a little different from other tandoori mixes on food.com by the use of dried mint. If you don't find dried mint in the herb/spice section, check the tea section of the supermarket. I think the mint is a substitution for dried fenugreek leaves, which can be found at an Indian market.

Steps:
- Mix all ingredients except the water in a non-reactive bowl. Add just enough water to produce a slightly runny paste which should drip slowly off a spoon like treacle.
- To use the paste, add the paste to the recipe oil (or ghee) and stir continuously until the paste color darkens and the oil separates and floats to the surface of the mixture. Let the paste cool a little before adding to the chosen recipe.
