Time 27m

Yield 4 sandwiches

Number Of Ingredients 13

4 (6-ounce) boneless, skinless chicken breasts
Kosher salt and freshly ground pepper
2 teaspoons unsalted butter, plus more for brushing on the bread
2 tablespoons good quality olive oil
2 teaspoons dried tarragon
1/4 cup dry white wine
12 ounces sliced baby portabella mushrooms
5 ounces baby spinach
1 medium red bell pepper
4 tablespoons prepared or homemade basil pesto
4 tablespoons high quality mayonnaise
8 slices Italian white sandwich bread
4 thick slices whole milk mozzarella cheese

Steps:

  • Cover the chicken breast with plastic wrap and gently pound to a uniform thickness to ensure even cooking.
  • Season the chicken breast with salt, pepper, and dried tarragon.
  • Pan saute the chicken breast in 2 teaspoons butter and 1 tablespoon olive oil over medium-high heat. Once the chicken in browned on one side, about 4 minutes, flip and add white wine and continue cooking until the internal temperature reads 165 degrees F on an instant read thermometer, about 5 minutes more.
  • In another medium skillet, heat the remaining 1 tablespoon olive oil over medium-high heat. Add the sliced mushrooms and cook until golden on each side and tender, about 5 minutes. Remove from pan. Add the spinach to the skillet and cook until slightly wilted, about 2 minutes.
  • Meanwhile, roast the red bell pepper under the broiler until the skin is blackened on all sides, about 6 minutes. Place the pepper in a bowl covered with plastic wrap and allow to steam 5 minutes. Peel, seed and slice into 1/4-inch strips.
  • In a small bowl, whisk to combine the basil pesto and mayonnaise.
  • Heat a large nonstick skillet or griddle on medium heat. Butter one side of both slices of the bread and place them butter-side down on a cutting board. Build each sandwich by beginning the layering on one of the slices of bread with the sliced mozzarella cheese, the sauteed mushrooms, spinach, roasted red peppers, and chicken. Spread 2 tablespoons of the pesto mayonnaise on the other slice and place it buttered-side up on top.
  • Place the sandwich on the griddle and cook until golden, about 4 minutes. Flip and continue to cook the other side until it is golden and the filling is warmed and cheese is melted, about 4 more minutes.

BRUSCHETTA PASTA SALAD WITH CHICKEN

Bruschetta Pasta Salad with Chicken image

Inspired by the flavors of bruschetta, this pasta salad boasts fresh tomatoes, mozzarella, and basil in a balsamic vinaigrette. I love the addition of roasted chicken (rotisserie chicken is a great store-bought shortcut!) because it turns this simple side dish into the main event. It's truly a meal-in-a-bowl, and best of all, that meal can be served warm, room temp or chilled.

Time 15m

Yield 8 servings

Number Of Ingredients 13

1 pound uncooked short pasta, such as gemelli or bowties
3 cups diced tomatoes (See Cook's Note)
1 cup mini mozzarella balls, halved
2 cups diced cooked chicken (See Cook's Note)
1 cup fresh basil leaves
1/2 cup marinated artichoke hearts, quartered
1/3 cup sliced black olives
1/3 cup shredded Parmesan
1/4 cup balsamic vinegar
2 cloves garlic
1 tablespoon honey
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Make the pasta salad: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, according to the package directions. Drain the pasta, transfer to a large bowl, and let cool slightly. Add the tomatoes, mozzarella, chicken, basil, artichokes, olives, and Parmesan. (If you're looking to make this recipe in advance, leave out the fresh basil and stir it in right before serving.) Toss to combine.
  • Make the dressing: In a small bowl, whisk together the balsamic vinegar, garlic and honey. While whisking, stream in the olive oil and whisk until emulsified. Taste and season the dressing with salt and pepper.
  • Add the dressing to the pasta salad and toss to combine, then serve immediately or refrigerate for, covered with plastic wrap or in an airtight container for up to 3 days.

  • Use fresh ingredients whenever possible. This will ensure the best flavor and texture for your salad.
  • Choose ripe tomatoes for the best flavor.
  • If you don't have balsamic glaze, you can make your own by reducing balsamic vinegar in a saucepan over low heat until it thickens.
  • Toasted bread cubes add a nice crunch to the salad. You can toast them in the oven or in a toaster.
  • If you don't have fresh basil, you can use dried basil instead. However, fresh basil will give the salad a more pronounced flavor.
