BELGIAN HOT CHOCOLATE
One of the first recipes David Lebovitz put up on his site was a hot chocolate recipe from Wittamer, one of the best chocolate shops in Brussels, where he actually worked for a time. The head chocolatier, Michael Lewis gave him this recipe, which they serve in their chic tea salon overlooking the place Sablon. Try to find the best chocolate you can(30-40%). Adapted from The Great Book of Chocolate.

- Warm about one-third of the half-and-half or milk, with the chopped chocolates and salt, stirring until the chocolate is melted.
- Whisk in the remaining half-and-half or milk, heating until the mixture is warmed through. Add the cinnamon.
- Use a hand-held blender, or a whisk, and mix the hot chocolate until it's completely smooth. Serve very warm. Enjoy!
- At Wittamer, it's served with a poof of whipped cream and chocolate curls.
BELGIAN HOT CHOCOLATE
This is adapted from a recipe by David Lebowitz. If you can't find Belgian chocolate use another type, either way it should be high quality. I love Callebaut when I can find it , and rumor has it that Trader Joe's Pound Plus bars are made by them, they are my back up bar for baking.

Tips:
- Use high-quality chocolate: The better the chocolate, the better the hot chocolate will be. Look for chocolate with a cocoa content of at least 70%.
- Don't use unsweetened chocolate: Unsweetened chocolate will make your hot chocolate bitter. Use semisweet or bittersweet chocolate instead.
- Use whole milk: Whole milk will make your hot chocolate richer and creamier. If you're using skim or low-fat milk, you may need to add a little bit of butter or cream to get the same consistency.
- Don't boil the milk: Boiling the milk will make the chocolate seize up. Heat the milk over medium heat until it just barely simmers.
- Stir constantly: Stir the hot chocolate constantly while it's heating up to prevent the chocolate from burning.
- Add flavorings: Once the hot chocolate is done, you can add flavorings such as vanilla extract, cinnamon, or nutmeg. You can also top it with whipped cream or marshmallows.
Conclusion:
Belgian hot chocolate is a delicious and decadent treat that's perfect for a cold winter day. It's easy to make and can be customized to your own taste. So next time you're looking for a warm and comforting drink, give Belgian hot chocolate a try.
