3 garlic cloves
1 1/2 cup whole Greek yogurt
1/4 tsp chili chipotle powder
1/4 cup olive oil
1/2 tsp salt

1 1/2 pounds beets, halved
Parchment paper
3/4 cup light sour cream
Juice and zest of 1 lemon
Pinch ground cardamom
1/4 teaspoon salt
1 small clove garlic
Whole-wheat pita wedges (optional)

Steps:

  • Heat oven to 425°F. Roast beets on a cookie sheet lined with parchment paper, turning once halfway through, until soft, 45 to 60 minutes. Remove from oven and let cool. 1 cup whole milk ricotta
2 tablespoons red wine vinegar

  • Preheat the oven to 450 degrees F.

2 tablespoons extra-virgin olive oil, more for beets
45 grams walnuts (about 1/2 cup)
1 very large clove garlic, minced
