- Puree the soup in batches in a blender (holding a thick towel over the lid to prevent overflow) until very smooth.
- Just before serving, reheat the soup until steaming and taste for seasoning, adding salt as necessary. Ladle the soup into bowls and garnish each bowl with a swirl of mustard oil, a dollop of goat cheese and a sprinkle of thyme.

BEER CHEESE FONDUE
Soft pretzels, sliced German sausages, pickled garden vegetables, and roasted Brussels sprouts can all be dipped in this oozy cheese sauce for one amusing wintertime party. Swiss Alpine-style cheeses are the best choice for fondue, given their earthy, robust flavor and excellent melting quality. Substitute any easy-melting cheese for the Gruyère found in this recipe. Raclette, Emmentaler, Cheddar, Fontina, and Gouda are all delicious choices, and can be blended for a more complex flavor.

Steps:
- If you are using an electric fondue pot, turn it onto medium; otherwise use a double boiler to heat up this mixture. Place beer, garlic, dry mustard, and Worcestershire sauce in the pot and combine well. Shred or cube the cheeses and toss with flour, coating the cheese well. (The flour will help thicken the sauce.) When the beer mixture is warm, add one-third of the cheese and whisk very well. Once the cheese has been incorporated well, add half of the remaining cheese and whisk in very well. Add the remaining cheese and whisk until nice and smooth. Cooks notes: If you do not wish to make this with beer, I cannot give you a suggestion for the beer other than a product like O'Doul's or a near-beer with less than 3.2 percent alcohol. The beer flavor really adds a lot to this dish. Please do not serve this dish to people who do not drink alcohol. Alcohol really doesn't fully cook out of the food. The Melting Pot uses vegetable broth in place of beer for those that do not want alcohol. It is just as good as with the beer.

Steps:
- Whisk flour, beer, eggs, 2 tablespoons vegetable oil, nutmeg, and salt in a large bowl to form a smooth batter.
- Toss bananas with enough lemon juice to coat in a separate bowl.
- Beat the cream cheese and brown sugar together in a separate bowl until light and fluffy; fold whipped topping into cream cheese mixture to form the cheese filling. Set aside.
- Heat white sugar in a saucepan over medium heat, stirring constantly, until melted and brown, 2 to 4 minutes. Remove sauce pan from heat and stir boiling water into melted sugar. Return to heat and stir until it forms a smooth and clear syrup.
- Whisk cornstarch and 1/2 cup water together in a small bowl; add to syrup in saucepan. Simmer over low heat, stirring constantly, until thick and clear, 5 to 7 minutes. Whisk butter into syrup to form a caramel sauce.
- Heat 1 teaspoon vegetable oil in an 8-inch crepe pan over medium heat. Pour about 1/4 cup crepe batter into heated oil. Tip and rotate the skillet until batter covers the entire area. Cook until the batter turns from wet to moist, and the edges begin to curl away from the sides of the skillet. Flip crepe and continue cooking until lightly golden on the other side. Place crepe onto a plate, and cover with a kitchen towel to keep moist. Repeat with remaining batter, lightly oiling the skillet as needed with 1 teaspoon vegetable oil each time to keep the crepes from sticking.
- Assemble crepes by spreading about 2 tablespoons caramel sauce over each crepe. Spread 1/8 the cream cheese filling onto the caramel layer; top with 1/8 the bananas. Roll the crepe around the bananas and place seam-side down on a serving platter. Repeat with remaining crepes and ingredients. Drizzle remaining caramel sauce over crepes.

Tips:
- Choose Fresh Ingredients: For the best flavor and texture, use fresh ingredients whenever possible, especially when it comes to the cheese and beer. Freshly grated cheese will melt more smoothly and provide a more vibrant flavor, while a good-quality beer will add depth and complexity to the dip.
- Shred Your Own Cheese: Pre-shredded cheese may contain additives that can prevent it from melting smoothly. Shredding your own cheese from a block will ensure that it melts evenly and provides a creamy consistency.
- Use a Variety of Cheeses: Don't be afraid to experiment with different types of cheeses to create a unique and flavorful dip. A combination of sharp cheddar, Monterey Jack, and Gruyère is a classic choice, but you can also try adding Parmesan, fontina, or Gouda for a different flavor profile.
- Choose the Right Beer: The type of beer you use will have a significant impact on the flavor of the dip. For a mild and creamy dip, use a light lager or pilsner. For a more robust flavor, try using a darker beer, such as a stout or porter.
- Don't Overcook the Dip: Beer cheese dip is best when it is melted and bubbly, but not overcooked. Overcooked dip will become thick and rubbery, so keep an eye on it while it is cooking and remove it from the heat as soon as it is melted.
Conclusion:
Beer cheese dip is a delicious and versatile appetizer that is perfect for any occasion. With its creamy texture, cheesy flavor, and hint of beer, it is sure to be a crowd-pleaser. Whether you serve it with pretzels, crackers, or vegetables, this dip is sure to be a hit. So next time you're looking for a quick and easy appetizer, give beer cheese dip a try - you won't be disappointed!
