Categories     main-dish

Time 3h20m

Yield 8 servings

Number Of Ingredients 13

1 (3 to 4 pound) piece beef chuck roast, trimmed of excess fat
Kosher salt and freshly ground black pepper
3 tablespoons olive oil
1 cup canned crushed tomatoes
1 cup water
2 red onions, halved
2 garlic cloves, chopped
8 carrots, sliced
2 celery stalks, sliced
1 cup button mushrooms, stems removed
2 sprigs fresh rosemary
4 sprigs fresh thyme
2 bay leaves

Steps:

  • Season all sides of the beef with a fair amount of salt and pepper. In a large Dutch oven or other heavy pot that has a tight cover; heat 2 tablespoons of the oil over moderately high heat. Brown the meat on all sides, taking the time to get a nice crust on the outside. Pour in the tomatoes and the water. Scatter the vegetables and herbs around the pot roast, season with salt and pepper; and drizzle with the remaining tablespoon of oil. Cover the pot and reduce the heat to low. Braise for about 3 hours, basting every 30 minutes with the pan juices, until the beef is fork tender.
  • Slice the pot roast and arrange on platter surrounded by the vegetables. Serve with the pot juices.

Yield Serves 6 to 8

Number Of Ingredients 16

2 1/2 pounds boneless chuck roast, trimmed, and cut into 2-inch pieces
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons canola oil
3 medium carrots, cut diagonally into 2-inch pieces
2 medium parsnips, cut into 2-inch pieces
1 pound baby Yukon gold potatoes, halved
1 medium onion, finely chopped
4 cloves garlic, minced
1 tablespoon minced fresh sage
1 (12-oz.) bottle stout beer
2 cups beef broth
1/3 cup chopped fresh parsley, divided
1 tablespoon prepared horseradish
2 teaspoons cornstarch
Kosher salt and black pepper

Steps:

  • Season beef evenly with 1 1/2 teaspoons salt and 1 teaspoon pepper. Brown beef in hot oil over medium-high, in batches, about 1 to 2 minutes on each side. Place beef in a 6-quart slow cooker; add carrots, parsnips, and potatoes.
  • Cook onion in hot drippings over medium-high 4 minutes or until translucent and beginning to brown. Add garlic and sage; sauté 1 minute. Deglaze pan with beer, stirring to loosen any browned bits from bottom of skillet. Simmer 5 minutes or until beer is reduced by half. Add broth, and return to a simmer. Pour over mixture in slow cooker. Cover and cook 8 hours on LOW or until beef and vegetables are tender.
  • Transfer beef and vegetables to a serving bowl; keep warm. Pour liquid from slow cooker through a strainer into a medium saucepan; stir in 1/4 cup parsley and 1 tablespoon horseradish. Bring to a boil over medium-high. Reduce heat to medium, and simmer 20 minutes or until sauce is reduced to 1 cup.
  • Whisk together cornstarch and 2 teaspoons water. Gradually add to mixture in saucepan, whisking constantly. Simmer 1 minute, whisking constantly. Add salt and pepper to taste. Serve beef and vegetables with sauce and remaining chopped fresh parsley.

Time 2h10m

Yield 6 to 8 portions

Number Of Ingredients 17

2 pounds beef stew meat, chuck, shoulder or bottom round
2 bay leaves
1 tablespoon dry thyme
1 tablespoon dry rosemary
1/4 cup vegetable oil
2 tablespoons butter
1 cup onions, peeled and diced
1/4 cup flour
12 ounces dark beer
1 quart hot beef broth
1/2 cup crushed tomatoes
2 teaspoons salt
2 teaspoons ground black pepper
1/2 cup carrots, peeled and diced
1/2 cup celery, peeled and diced
1 cup rutabaga (wax turnips), peeled and diced
1 cup parsnips, peeled and diced

Steps:

  • Season the beef with salt and pepper. Tie the bay leaves, thyme and rosemary into a sachet garni in cheesecloth. In a large casserole combine the oil and butter and heat until the butter bubbles. Add the beef in one flat and not too tightly packed layer and brown the beef well on all sides. Remove the beef, set aside and add the onions to the casserole and cook to a golden caramelized color. Sprinkle the onions with the flour and stir to combine well.
  • Return the beef to the casserole, add the beer, hot broth, herb sachet garni, tomatoes, salt and pepper. Bring to a boil and reduce the heat to a slow simmer. Cook for 3/4 hour.
  • Add the carrots, celery, rutabaga and parsnips and continue to cook for 1 additional hour.

BEER-BRAISED BRISKET WITH ROOT VEGETABLES

Beer-Braised Brisket with Root Vegetables image

Yield Serves 6 to 8

Number Of Ingredients 10

4 slices of bacon, chopped
a 2 1/2-pound beef brisket
3 onions, sliced thin
four 12-ounce bottles of beer (not dark)
1 large rutabaga (about 2 pounds), peeled and cut into 1/2-inch pieces
6 carrots, cut crosswise into 1 1/2-inch-thick pieces
6 boiling potatoes, cut into 1-inch pieces
a beurre manié made by blending 2 tablespoons softened unsalted butter with 2 tablespoons all-purpose flour
cooked noodles as an accompaniment
1/2 cup minced fresh parsley leaves

Steps:

  • Preheat the oven to 350°F. In a kettle cook the bacon over moderate heat, stirring, until it is crisp, transfer it to paper towels to drain, and pour off all but 2 tablespoons of the fat. Heat the fat remaining in the kettle over moderately high heat until it is hot but not smoking, in it brown the brisket, patted dry and seasoned with salt and pepper, and transfer it to a platter. Add the onions to the kettle, sauté them until they are golden, and add the bacon, the brisket, and the beer. Bring the beer to a boil and braise the brisket, covered, in the oven for 2 hours. Stir in the rutabaga, the carrots, and the potatoes and braise the mixture for 45 minutes, or until vegetables are tender.
  • Transfer the brisket and the vegetables with a slotted spoon to a plate and keep them warm, covered. Bring the braising liquid to a boil, boil it until it is reduced to about 3 cups, and bit by bit whisk in the beurre manié, whisking well after each addition. Simmer the sauce for 3 minutes and season it with salt and pepper. Slice the brisket and arrange it and the vegetables with the noodles on a platter. Spoon some of the sauce over the brisket and the vegetables, sprinkle the dish of parsley, and serve the remaining sauce separately.

Tips:

  • To ensure the beef is tender, use a chuck roast or another cut of meat suitable for braising.
  • Do not overcrowd the pot with vegetables; otherwise, they will not brown properly. If necessary, cook the vegetables in batches.
  • For a thicker sauce, add a cornstarch slurry towards the end of the cooking time.
  • Serve the roast and vegetables over mashed potatoes, egg noodles, or rice.

Conclusion:

Beer-braised roast with root vegetables is a hearty and flavorful dish that is perfect for a cold winter day. The beef is fall-apart tender, and the vegetables are roasted to perfection. The beer adds a unique flavor to the dish, and the thyme and rosemary give it a touch of herbaciousness. This dish is sure to please everyone at the table.
