1 egg white
1 cup light beer
1 cup all-purpose flour
3/4 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
Vegetable oil
4 apples, (It's probably best to peel the apples, but I didn't peel mine, I used Granny Smith and Gala)
1/3 cup powdered sugar
1/4 teaspoon ground cinnamon

Steps:

  • In a medium bowl, whisk egg white until foamy. Whisk in beer, flour, cinnamon, nutmeg, and salt. Set aside.
  • Pour about 2 inches of Vegetable oil into a Dutch oven or deep cast iron skillet or pot. Heat to 375 degrees.
  • While oil is heating, cut apples into slices about 1/4 to 1/2-inch thick, starting at bottom of apple and working your way to stem end. Use an apple corer or a knife to remove the core part of each slice. Pat apple slices dry with paper towel and place in batter.
  • Coat slices well in batter and fry about 4 apple rings at a time, cooking 2 to 3 minutes per side. Remove to a paper towel-lined plate. Immediately after removing from oil, sprinkle with just a touch of salt.
  • Combine powdered sugar and cinnamon and sift over apple rings before serving. Best served immediately.

½ teaspoon cinnamon
12 oz redd's apple ale, 1 bottle
3 red apples
¼ cup powdered sugar
oil, for frying, can be vegetable, canola, or peanut

Steps:

  • Heat oil in a large pot so it's at least 4 inches (10 cm) deep. If you have a thermometer, be sure the oil reaches at least 360ºF (185ºC) for frying.
  • In a bowl, whisk together flour, cinnamon, and Redd's Apple Ale until smooth.
  • Slice off the top and bottom of the apples, and slice each apple into ½-inch (1 cm) thick rounds.
  • With a teaspoon or large piping tip, cut out a circle in the center of the apple ring to make it look like a donut.
  • With a paper towel, pat down the apple slices.
  • Dip the apple slices in the batter.
  • Fry them two to three at a time. Flip each apple slice once during frying and fry until both sides are golden brown.

1 large onion, ends trimmed and skin removed
3 Granny Smith apples, peeled and cored
Salted Cinnamon Sugar, recipe follows
3 tablespoons sugar
2 tablespoons cinnamon
1/2 teaspoon kosher salt

Steps:

  • Pour enough oil in a medium saucepan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 375 degrees F.
  • In a medium mixing bowl whisk the egg white until frothy. Stir in the beer. Add the flour and salt. Mix until the batter is smooth. Set aside.
  • Cut the onion into 1/2-inch slices and separate into rings. Slice each apple into 5 rings and pat dry with paper towels.
