BEEFY MACARONI & TOMATOES



Beefy Macaroni & Tomatoes image

This is a dish that my mother made when she needed to fix something quick or just because we liked it so well.

Number Of Ingredients 7

1 pkg large elbow macaroni or any pasta 8-12 oz
1 lb ground chuck
1 can(s) diced tomatoes
1-2 can(s) tomato sauce 8 oz
1/4-1/2 tsp oregano leaves, optional
salt and pepper to taste
1 c cheddar cheese, shredded

Steps:

  • 1. In saucepan cook macaroni per package directions. Basically, bring salted water to boil; add macaroni and cook until tender about 7-10 minutes. Drain.
  • 2. In the meantime, brown ground chuck that has been seasoned with salt and pepper. Cook until done then drain. Note: I use a large iron skillet.
  • 3. Add the tomatoes and tomato sauce to ground beef Add oregano leaves, if desired. Stir in cooked macaroni and let simmer about 20 minutes. Stirring occasionally. Remove from heat and top with shredded cheese.

6 medium tomatoes
1 pound lean ground beef (90% lean)
1 medium onion, chopped
2 teaspoons dried basil
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup cooked rice
1/2 cup shredded reduced-fat cheddar cheese
1 large egg, lightly beaten

Steps:

  • Cut a thin slice off the top of each tomato and discard; remove core. Carefully scoop out pulp, leaving a 1/2-in. shell. Reserve 1 cup pulp (discard remaining pulp or save for another use). Invert tomatoes onto paper towels to drain. , In a nonstick skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the basil, salt, pepper and reserved tomato pulp; bring to a boil. Reduce heat; simmer, uncovered, for 10-12 minutes or until the liquid has evaporated. Stir in the rice, cheese and egg; heat through. Spoon into tomato shells. , Place in a shallow 2-qt. baking dish coated with cooking spray. Bake, uncovered, at 350° for 20-25 minutes or until heated through.
