CORN PUDDING CASSEROLE RECIPE

Corn Pudding Casserole Recipe image

The Southern holiday sideboard isn't complete without a pan of cheesy and creamy corn pudding. This version, made with fontina or Swiss cheese, is more savory than sweet. If fresh corn isn't in season, you can use frozen corn. Drain the thawed corn well so it doesn't make the casserole watery.

Tips for Making Beefy Southwestern Corn Pudding Casserole:

- Use fresh ingredients. This will give your casserole the best flavor. Fresh corn is especially important, as it adds a sweetness and crunch that canned corn can't match. - Don't overcook the corn. You want it to be tender but still have a little bit of a bite to it. Overcooked corn will be mushy and bland. - Use a good quality chili powder. This is the key ingredient in the casserole, so make sure you use one that you like the taste of. A good chili powder will have a smoky, slightly sweet flavor. - Don't be afraid to experiment with the toppings. You can use shredded cheese, sour cream, salsa, or guacamole. Or, you can get creative and try something different, like crumbled bacon or diced avocado. - Let the casserole rest before serving. This will allow the flavors to meld together and the casserole to set up.

Conclusion:

Beefy Southwestern Corn Pudding Casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal or a potluck. It's also a great way to use up leftover corn on the cob. With its creamy, cheesy interior and flavorful corn and beef filling, this casserole is sure to be a hit with your family and friends.
