QUICK AND EASY MINESTRONE

Quick and Easy Minestrone image

Traditionally, minestrone is slow-simmered with Parmigiano-Reggiano rinds to impart a rich umami flavor to the broth. In our shortcut version, soy sauce is used instead, adding instant depth to this pantry-friendly soup.

Tips:

  • Fresh Ingredients: Use fresh vegetables, herbs, and spices to enhance the flavor of your minestrone. Freshness brings out the natural flavors of the ingredients and elevates the overall taste of the soup.
  • Rich Beef Broth: Make your own beef broth or use a high-quality store-bought broth. A flavorful broth forms the base of the soup and contributes significantly to its taste. Simmer the beef bones or meat for several hours to extract maximum flavor.
  • Sautéing Vegetables: Before adding vegetables to the soup, sauté them in a little olive oil. This caramelizes the vegetables, bringing out their natural sweetness and adding depth of flavor to the soup.
  • Slow Simmering: Simmer the soup for at least 30 minutes, allowing the flavors to meld and develop. The longer the soup simmers, the richer and more flavorful it becomes.
  • Fresh Herbs: Add fresh herbs like parsley, basil, or thyme towards the end of cooking. Fresh herbs add a vibrant, aromatic touch to the soup and enhance its overall flavor.
  • Garnish and Serve: Serve the soup hot, garnished with grated Parmesan cheese, a drizzle of olive oil, and a sprinkle of freshly ground black pepper. These finishing touches add extra flavor and visual appeal to the soup.
