½ pound bulk spicy pork sausage
½ pound ground beef
1 onion, diced
1 (2 pound) loaf processed cheese food (such as Velveeta®), cubed
1 (28 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
1 (10.75 ounce) can condensed cream of mushroom soup

Steps:

  • Heat a large skillet over medium-high heat. Crumble sausage and ground beef into the skillet; add the onion. Cook and stir the beef mixture until the meat is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease. Pour into a slow cooker.
  • Layer cheese food cubes atop meat mixture.
  • Blend diced tomatoes with green chile peppers in a blender until smooth; pour over the cheese cubes along with the cream of mushroom soup. Stir the mixture.
  • Cook on High, stirring occasionally until the cheese is completely melted, about 90 minutes.

1 package (8 ounces) reduced-fat cream cheese
1-1/2 cups shredded reduced-fat cheddar cheese
1/2 cup fat-free sour cream
2 packages (2-1/2 ounces each) thinly sliced dried beef
1/2 cup chopped green onions
1/2 cup mild pepper rings, drained and chopped
2 teaspoons Worcestershire sauce
1 loaf (1 pound) unsliced round rye bread
Assorted fresh vegetables

Steps:

  • In a large bowl, combine the cream cheese, cheddar cheese and sour cream. Stir in the beef, onions, peppers and Worcestershire sauce. , Cut the top fourth off the loaf of bread; carefully hollow out bottom, leaving a 1-in. shell. Cube removed bread and top of loaf; set aside., Fill bread shell with beef mixture. Wrap in foil; place on baking sheet. Bake at 350° for 60-70 minutes or until heated through. Serve with vegetables and reserved bread cubes.

1 lb velveeta
1 jar(s) salsa, chunky
1 lb each, ground beef and pork sausage

Steps:

  • 1. Brown ground beef and sausage together in a large pan.
  • 2. While your meat is browning, cut Velveeta into cubes (however small you like). This will help with melting into the meat.
  • 3. Drain fat from ground beef/sausage. Return to medium heat and add Velveeta, cubed. Once melted and mixed together, add the jar of salsa and heat thoroughly.
  • 4. Serve with Fritos corn chips or sturdy tortilla chips.

1 lb ground beef
1 (1 1/4 ounce) packet taco seasoning
1 (16 ounce) package Velveeta cheese
1 (16 ounce) jar medium chunky salsa (or salsa of your choice)

Steps:

  • Brown ground beef and add taco seasoning as directed on packet. We usually use a little less water though.
  • Chunk the Velveeta and add to crockpot.
  • Pour in jar of salsa and add the prepared meat.
  • Let melt together in the crockpot, stirring occasionally.
  • At times, we have been in a hurry and used the microwave to help speed up the melting process for the Velveeta. Then just add the melted Velveeta to the other ingredients in the crockpot to keep warm and melty for dipping!
  • We have also used Mexican style Velveeta and Pepper jack, and it was just as good. Feel free to experiment.

1 teaspoon chili powder
